Taste Bud Tuesdays- Twist tomato cucumber salad 2 cups cherry tomatoes , halved 5 mini cucumbers , sliced into 1/4'' coins 3 teaspoons olive oil... 1 teaspoon red wine vinegar salt and freshly ground black pepper , to taste 2 Tablespoons red onions , diced 2 Tablespoons fresh basil leaves , chopped Instructions Add cherry tomatoes and cucumbers to a bowl. Drizzle olive oil and vinegar on top. Season with salt and pepper. Toss everything to coat. Garnish with diced red onion and fresh basil. See more

Taste Bud Tuesdays-Blackened Cod and Veggies 1 tbsp paprika 1 tbsp smoked paprika 1/2 tsp cumin... 1/2 tsp oregano 1/2 tsp garlic powder 1/2 tsp salt 1/4 tsp coriander 1/4 tsp black pepper 1/8 tsp cayenne pepper 1 tbsp. olive oil 4 sweet potatoes, chopped 1.33 lbs. cod (whole piece or filets) 1 zucchini, chopped 1 summer squash, chopped Preheat the oven to 400 degrees. Mix together all the spices to create the blackening season. You could also use store-bought blackening seasoning if you prefer. Toss the sweet potatoes with olive oil and about half of the blackening seasoning. I like a lot of the seasoning but you may want to use less depending on how much spice you like. Cover a baking sheet with foil and spray with cooking spray. Spread the potatoes on the baking sheet in one layer and place in the oven. Cook for 20 minutes. After 20 minutes, push the sweet potatoes to one side of the baking sheet and add the fish, zucchini, and summer squash. Sprinkle with blackening seasoning. Return to oven and cook for 8-10 minutes until fish is flaky and cooked through.

Taste Bud Tuesdays- Salmon Quuinoa Burgers Salmon Quinoa Burgers Course: Main Course Servings: 5 burgers Ingredients... 1 lb ground salmon preferably wild caught 1 cup cooked quinoa 1 tsp salt 1 whole egg 1/4 cup parsley chopped 2 tbsp olive or avocado oil 5 hamburger buns lettuce for serving tomato for serving Instructions Combine all ingredients in a large bowl. Heat the oil over medium heat in a large skillet. Fry burgers for about four minutes per side, or until done to your preferred doneness. Serve on prepared buns with condiments that you prefer. Taste Bud Tuesdays- Stuffed Sweet Potatoe 3-4 medium sweet potatoes 1 tbsp oconut oil 1 small onion, diced... 5 garlic cloves, minced 1 lb ground chicken) 3-4 tablespoons chili powder (adjust according to your taste) 1 tbsp cumin 1 teaspoon sea salt 2 cups tomato sauce (or a 15oz can) Instructions Preheat your oven to 425 degrees. Scrub your sweet potatoes and pierce the skin a few times with a fork. Place the sweet potatoes on a baking sheet and bake for 30-45 minutes, or until they’re easily pierced with a fork. While the potatoes are cooking, let’s make the sauce! Heat the ghee or coconut oil in a medium sized pan over medium-low heat. Add the diced onion and sauté until tender, about 5 minutes. Add the chicken and sauté until cooked through. Drain the fat if needed/desired. Add the garlic and sauté until it becomes fragrant, about 30 seconds. Add the chili powder, cumin and salt to the pan and stir it like you mean it! Add the tomato sauce to the pan and stir again like you mean it! Simmer for 10 minutes, stirring occasionally. Remove the potatoes from the oven once they’re cooked through, cut open in the middle and stuff with the enchilada filling. These are extra delicious topped with chives, chopped onion, and avocado! See more
