Peppermint Patties Ingredients: Peppermint Filling... 1 oz cream cheese 1 cup powdered monk fruit 1 tsp heavy cream tsp peppermint extract Chocolate Coating 6 oz Lily’s Chocolate Chips 2 tsp coconut oil (optional) Instructions: 1. Cream the cream cheese with an electric mixer. Add the heavy cream and peppermint extract. Add the powdered sweetener slowly, mixing well after each addition. 2. When it is thoroughly mixed in form 24 balls and press down into one-inch circles on a piece of parchment paper. Freeze for 15 minutes. 3. Melt the chocolate (and coconut oil, if using) in the microwave in 30-second increments, mixing well after each. When the chocolate is 80% melted stop heating it and stir until it is completely melted. 4. Use a fork to dip each peppermint patty into the chocolate. Place on a new sheet of wax paper. Repeat. Chill until the chocolate sets. Store in the refrigerator.

(EASY!) Keto Stuffing Ingredients: 1 large cauliflower head (cut into small florets) 1 large onion (chopped)... cup celery (chopped) 2 garlic cloves (minced) tsp poultry seasoning tsp thyme tsp sage 1 tsp sea salt tsp black pepper 2 Tbsp olive oil Instructions: 1. Preheat oven to 450 degrees and line baking sheet with parchment paper. 2. In a large bowl add all ingredient then toss in olive oil and seasoning and stir together. 3. Spread mixture in a single layer on the baking sheet and bake for 25-30 minutes (until cauliflower is browned and onions are caramelized). THAT’S IT! :)

Crispy Cinnamon Sugar Graham Crackers LOW CARB // GUILT FREE Ingredients:... 1 cup almond flour tsp sea salt tsp xanthan gum cup monk fruit 1 tsp cinnamon 2 Tbsp unsalted butter cup unsweetened almond milk tsp vanilla extract Directions: 1. Add almond flour, salt, xanthan gum, monk fruit and cinnamon to a food processor. Pulse several times to combine. 2. Add butter (cubed) and pulse a few times. Add milk and vanilla extract. Process until the dough forms into a ball. 3. Form the dough into 2 small balls. 4. Roll each ball of dough between 2 pieces of parchment pepper until 1/8" thick (The thinner the dough, the crispier the cracker). 5. Remove the top sheet of parchment. Optional to sprinkle with additional cinnamon and monk fruit. 6. Cut the dough into 2" squares using a pizza cutter and prick each cracker with a fork. 7. Place cut crackers in the freezer for 15 minutes. 8. Preheat oven to 350 F. 9. Remove crackers from the freezer and spread them out onto the baking sheet and leave about 1/2" - 1" between each cracker. 10. Bake for 10 minutes. 11. Flip the crackers and bake for an additional 7 mins (watch for burning) 12. Allow crackers to cool completely on the parchment paper before moving. Enjoy!

Zucchini Bread Ingredients: 2 cups almond flour 1/4 tsp sea salt ... 1/2 tsp baking soda 1 tsp ground cinnamon 1/4 cup coconut oil, melted and cooled 1/4 cup sugar free maple-flavored syrup (or monk fruit) 1 tsp vanilla extract 3 large eggs, room temperature 3/4 cup shredded zucchini Instructions: 1. Preheat oven to 350 degrees F. Line a small loaf pan with parchment paper; set aside. 2. In a large mixing bowl, mix together almond flour, salt, baking soda, and cinnamon. 3. Add the coconut oil, maple flavored syrup, vanilla extract, and eggs. 4. Stir in the shredded zucchini. 5. Spoon batter evenly into your parchment lined loaf pan. 6. Bake for 30-35 minutes or until the center is set. 7. Remove from the oven and let cool completely before slicing. Makes 10 slices Calories: 202 Carbs: 6 Protein: 4 Fats: 18

Roasted Spaghetti Squash Boat Ingredients: 1 spaghetti squash Minced garlic... 4 cups organic spinach 2 cups mushroom 2 cup organic cheese (whatever you prefer) Salt and pepper Directions: Preheat oven to 375 degrees. Cut spaghetti squash in half, take out seeds and then bake in oven for 45 mins (or until squash in tender) In pan sauté garlic, mushrooms then add spinach and season with salt and pepper. Once spaghetti squash is finished baking place in casserole dish. Add spinach mixture to the middle and place cheese on top. Place back in oven and bake for an additional 20 mins. Top with red pepper, cilantro and siracha sauce. So good and dense in nutrients

Detox chicken tortilla soup Ingredients: 1/2 lb shredded chicken 1 bell pepper (chopped)... 1 stalk celery (Chopped) 1 cup cauliflower (chopped) 2 cloves Garlic (minced) 1 onion (chopped) 1 can tomato sauce (without seasoning) 4 cups chicken stock or broth 1/4 tsp cayenne pepper, ground 2 tsp chili powder, ground 1 tsp cumin, ground powder 1 cup Cream cheese, full-fat Directions: 1. Remove the chicken meat from the rotisserie chicken and put aside. 2. Heat avocado oil in a large saucepan over medium-high heat. Saute the onion and garlic for 3 minutes until they are golden brown and softened. 3. Stir in the bell pepper, celery, cauliflower and the stripped chicken meat. Add in all the spices and mix for 1 minute. 4. Pour in the chicken stock and tomato sauce bring the soup to a boil. 5. Reduce the heat to low and simmer for 20-30 minutes until the vegetables are soft and tender. 6. Stir in the cream cheese. Stir until cheese is melted. 7. Garnish it with chopped cilantro, The Real Coconut flour tortilla chips, lime and avocado. Hey friends! This is a STRANGE time, and I realize this STRANGE post might NOT resonate with some of you. But, then again, SOME of you will LOVE it.... For the past 6 months, more than 90% of people haven’t been working out like usual. They haven't even really been moving. They also have been eating like crap. Strange times.... Meanwhile, I, and MANY of you on OC|FIT ON DEMAND, and in our "In-person" facilities have been WORKING OUT LIKE ANIMALS. So, does this happen to you when you walk around? Do you look around and feel like YOU HAVE SUPER POWERS just because YOU'RE in shape? I do. Zombie apocalypse... Bring it.

We're on a pumpkin craze and I'll be making this pie all Fall. Best ever Pumpkin Pie (NO SUGAR!) Ingredients... Crust: 2 cups of almond flour 1 egg 1 tsp Cinnamon tsp sea salt 2 Tbsp coconut oil (melted) Pumpkin Pie Filling: 1 can of pumpkin pure can coconut milk 3 eggs 1 tsp pumpkin pie spice 1 tsp cinnamon cup monk fruit Instructions Crust: 1. Combine all ingredients until smooth and a dough is formed. I like to blend in a food processor so it becomes very fine. 2. Oil a pie pan and press dough evenly. No need to bake first. Pumpkin Pie Filling: 1. Add all ingredients to a large bowl and combine. Make sure there are no lumps. 2. Add pie filling to prepared crust. 3. Bake on 350 for about 50 minutes, or until the center is set. 4. Let cool and chill in the fridge for 2 hours.

(BEST EVER) Guiltfree Pumpkin Bread Ingredients: 2 1/4 cups almond flour 1 tsp baking soda... 3/4 cups Lily’s chocolate chips 1 tbsp pumpkin pie spice 1 15oz can pumpkin puree 1/2 tsp sea salt 1 tsp vanilla extract 3 eggs 1/4 cup monk fruit Directions: Preheat oven to 350F and prepared loaf pan with parchment paper or cooking spray. In a bowl, whisk together pumpkin, eggs, monk fruit, and vanilla. In another smaller bowl, mix together almond flour, baking soda, salt, and pumpkin pie spice. Add dry ingredients to wet and stir till combined. Fold in Lily’s chocolate chips. Bake for 45-50 minutes or until center comes out clean when tested with toothpick. If top begins to brown, cover halfway through with aluminum foil. Let cool completely before enjoying.

Soft Pretzels (carb free) Ingredients: 1 1/4 cups blanched almond flour 2 tablespoons grated Parmesan... 1 tablespoon baking powder 1 teaspoon garlic powder 1 teaspoon onion powder 1 cups shredded mozzarella 1 oz cream cheese, cubed 1 large egg, lightly beaten 1 egg yolk, beaten with 1 tsp of water (for egg wash) 1/4 teaspoon sea salt Directions: 1. Preheat oven to 350 degrees and line a baking sheet with parchment paper. 2. In a medium bowl, whisk together the almond flour, Parmesan, baking powder, garlic powder, onion powder, and cayenne. 3. In a large microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave for 30 seconds. Stir, microwave until completely melted (30-40 more seconds), and stir again. 4. Quickly add the almond flour mixture and the beaten egg. Mix to incorporate, then knead until smooth. 5. Divide the dough into 4 equal portions. Roll each portion into a thin 18-inch rope, then shape the rope into a pretzel. 6. Brush the tops of the pretzels with the egg wash and sprinkle with coarse salt. 7. Bake the pretzels until golden brown, 15-18 minutes.
