New dish alert! Our Maguro Nakaochi Karaage consists of fried medium fatty tuna, topped with mizore-oroshi, and bathed in dashi-ponzu. We fry the tuna with potato starch for a nice, light crunch. Mizore-oroshi is a snow-like mixture of daikon, ginger, and a few other special ingredients. It might look simple, but the umami flavor is spot on. Chef Sho says it’s a must try! Available for a limited time.

That right there, that’s 100 pounds of tuna! Sam-san is breaking it down today, which takes years of experience, knowledge, and skill.

Our new Iwashi sardine from Japan sold out so quickly! Along with the sardine, Sam-san simmered umeboshi (pickled plum) with dashi, bringing out its savory and acidic flavors. Top it with lots of shiso, goma, and cold-pressed olive oil and you have a delicious summer dish! Available again this weekend! @ Iyasare
