Thank you for including @bar_ama’s oxtail version in this story about all of L.A.’s flavors of birria, @nytimes @tejalxrao. ... On a recent, rainy weekend in Los Angeles, the chef Josef Centeno had put oxtail birria on his menu at Bar Amá. The meat was opulent, like a confit, infused all the way through with flavor, cooked so it slipped off the bone in your teeth, in places as gelatinous as the shreds of tomato in the thick, abundant sauce capped with spiced, scarlet-colored fat. He packed it all up with hot flour tortillas, raw red cabbage and cilantro, radishes, onion and salsa, each one in its own tiny to-go container so you could fix it the way you like.

The puffy taco (as seen on this season’s Netflix Taco Chronicles) is one of the iconic tacos of San Antonio and has been an off-the-menu item at Bar Amá since we opened. Fresh masa flash-souffléd so that it puffs up and is crispy on the outside and soft on the inside. You gotta work super-fast so that the masa doesn’t dry at all and know exactly how to make the perfect shape (while it’s in the fryer) to hold all the fillings. Available on our patio only. Why we love it: The modern dishes, like Broccolini Torrada with Aged Cheddar and Lime, which has been on the menu at Bar Amá from the start, are smartly delicious, bold and fabulous in flavor. And the soulful dishessuch as Carne Guisada, eaten as breakfast tacos with Tía Carmen’s Flour Tortillasare simply smashing. They are dishes we’ll come back to again and again.
