Chirashi Sushi Bowl, $80 Sashimi and vegetables on a bed of sushi rice. Chef Nagai has selected Anago (Conger Eel), Tuna, Kohada (Gizzard Shad), Tai (Red Snapper), Ikura (salmon roe), Uni (sea urchin), and Tamago Yaki (egg omelette), scattered over his signature sushi rices (two different Koshihikari rice seasoned with two different red vinegars from Chiba and Tokyo).
