Want to know how to turn a red snapper into a delicious pargo frito (fried snapper, Latin style)? First, come to the market this weekend and buy a couple of these delicious fish. Second, follow this recipe when you get home: Ingredients 2 small whole tilapias or red snapper, cleaned and scaled; about 1-1 pounds each.... 1 scallion, finely chopped. Juice of 1 lime. Salt and pepper. 1 tsp. dried parsley. 1/4 cup all purpose flour. 2 cups of vegetable or canola oil for frying. How to make it 1. Rinse the fish in cold water, making sure it’s well cleaned, inside and out. Pat dry with paper towels. 2. Using a sharp knife, make 3-4 cuts on each side of the fish. 3. Season the fish inside and out with salt and pepper. Rub the fish with the scallions and lime juice. Allow fish sit 10-15 minutes before cooking. 4. Add parsley to the flour and dredge fish with the mix to coat. 5. Pour oil into a large frying pan, at least 2 inches deep. 6. Heat oil over medium-high heat. If you have a thermometer, heat to 375 F. 7. Carefully place the dredged fish in oil, standing back in case of splatter. Turn heat to medium. 8. Fry the fish, without turning it, for about 5 to 7 minutes. 9. Turn the fish and fry about 5 to 7 minutes more or until the skin is crispy. 10. Transfer to a plate with paper towels to drain. Serve with fried zucchini, rice, avocado and lime wedges on the side.
