We believe in giving back to the community in which we live and work, said Sanctuary co-owner Annee Martin. This recipe from local favorite Cafe Carmel makes a lovely New Year's Eve dinner: Petrale Sole Filet on Roasted Fennel & Carrots 1 Petrale sole filet Small handful whole hazelnuts 1/2 bulb fennel... 1 carrot Pomegranate or pomegranate seeds Olive oil Salt and pepper Lemon Olive Oil Champagne Mimosa Vinegar Make vinaigrette using 3 parts Lemon Olive Oil with 1 part Champagne Mimosa Vinegar and a pinch of salt, whisk together. Toast hazelnuts in the oven 300F for 6 mins, cool and cut in half. Season filets of Petrale sole with salt and pepper and fold into thirds. Remove the bright green fronds from the fennel and reserve. Wash and slice the fennel into slices approximately 1/4 inch thick. Peel the carrots and cut into thick slices, season with olive oil, salt and pepper. Roast in the oven 350F for 20 minutes until browned and cooked through. Remove seeds from the pomegranate and reserve. Heat olive oil in a frying pan until smoking. Carefully place the folded fish into the pan and brown on one side, basting with the oil and cooking juices. After 1-2 minutes to sear turn the ‘parcel’ of fish over to sear the other side. When both sides are golden brown put the oven safe pan onto a baking sheet and into the oven at 300F for 7 minutes. When the vegetables and fish are cooked arrange the fennel slices and carrots on the serving plate, carefully lift the folded fish onto the fennel; scatter the toasted hazelnuts and pomegranate seeds around the fish and finish with vinaigrette and top with the fennel fronds. https://bit.ly/2ZRvsGi

#MeettheTeam Josh Ohanian - General Manager Josh Ohanian is from the town of Sebastopol, CA. He attended school at UC Santa Barbara, which is where he met his wife, Tara. Tara and Josh moved to Pacific Grove in 2016 after their wedding, which was in Berwick Park in Pacific Grove. He loves to surf, hike, camp, spend time with his wife and dogs and going to the beach. Josh started his career in hospitality in 2006 at the Royal Hawaiian Hotel in Waikiki, HI. He then moved to Sa...n Diego where he spent several years working at The Inn at Rancho Santa Fe and Hotel Solamar while completing his post-graduate studies at California State Polytechnic University, Pomona. From 2011 to 2016, he was recruited to assist with opening and operating the AAA Four Diamond-rated Thunder Valley Casino Resort within the hotel division, where he was employed as Guest Services Manager and then promoted to Assistant Hotel Manager. Bringing his experience of luxury hotel management and service training to Sanctuary Vacation Rentals further compliments the experience of our Guests and Owners.
