Spinach & Sweet Potato Egg Muffins - Such a healthy & tasty way to start the day, you can make a few batches of these muffins for a week of grab-n-go breakfasts! (Even if you're just headed to your home office, you need a healthy breakfast! ) Total time: ~35 minutes Serves 3 (2 muffins/each) Ingredients... 1 tbsp avocado oil 1 sweet potato (small, peeled, chopped into cubes) 4 cups baby spinach or lacinato kale 8 eggs 2 Tbsp water 1/4 tsp sea salt 1/4 tsp black pepper 2 chicken sausage links, diced white onion, diced Directions 1. Preheat the oven to 350 degrees F. Lightly grease a muffin pan with non-stick avocado oil. 2. Wash sweet potatoes and scrub under running water. Chop into cubes. Dice onions. 3. Dice chicken sausage. 4. In a large skillet, heat avocado oil over medium heat. Sauté the sweet potatoes, onions and chicken sausage until lightly browned. Once lightly browned, add spinach/kale and cook until wilted and tender. 5. Divide sweet potatoes, sausage, onions and spinach into the muffin cups. 6. In a mixing bowl whisk the eggs until well scrambled. Whisk in water, salt and pepper. 7. Pour the whisked eggs into the muffin cups to cover the ingredients. Fill about 85% of the way full. 8. Bake for 15 - 18 minutes or just until the egg is cooked through and no longer liquid on top. Remove from the oven, let cool and enjoy! Ingredients 2 (8-oz) sweet potatoes, unpeeled - choose long, thin sweet potatoes 1 Tbsp olive oil 1 Tbsp brown sugar 3 Tbsp almonds, finely chopped 3/8 tsp kosher salt 1/8 tsp ground red pepper Directions 1. Preheat oven to 400 2. Cut potatoes lengthwise into 1/2-inch wedges. Combine potatoes, oil, and sugar; toss to coat. Arrange potatoes in a single layer on a baking sheet lined with parchment paper. Lemon Pepper Cauliflower Steaks - This super-healthy comfort meal has roasted carrots, small red & yellow potatoes, onions & fresh thyme. Plus, this one-pan meal is gluten-free, vegan & oil-free. Bon appétit! Prep 10 mins Cook 50 mins Total 60 mins Servings 2-3 Ingredients 1 head cauliflower, cut into steaks (2-3)... 12 small carrots, 1/2 in. thick 16-18 small potatoes, halved 1/3 cup pearl onions (optional) 2 tbsp vegetable stock 1/2 tsp garlic powder 1/2 tsp onion powder Fresh thyme, as desired Salt & pepper, to taste Green onions, to garnish "Steak" Marinade: 2 tbsp vegetable stock 1 lemon juiced 1 lemon zested 2 cloves garlic, minced 1/2 tsp vegan Worcestershire, optional Salt & pepper to taste Directions 1. Preheat oven to 425 2. Cut cauliflower into about 1-inch thick "steaks" 3. Measure & mix marinade together, pour over steaks in a shallow dish, evenly coat both sides. Save extra marinade for later use. 4. Wash & cut potatoes & carrots to size. Add to a large bowl & toss with stock, seasonings to taste & fresh thyme. 5. Line a baking sheet with parchment paper & spread everything into a single layer. 6. Bake for 30 mins. Remove from oven & flip everything. Use extra marinade to baste cauliflower steaks liberally. 7. Add pearl onions and bake for another 15-20 mins, or until potatoes are tender. 8. Top steaks with remaining marinade and serve hot with salt and pepper to taste. 9. Garnish with diced green onion for more flavor, optional. Notes: To add crunch, bread the cauliflower with a flax egg & your favorite crumbs, with seasonings to taste as desired. To make flax egg: mix one Tbsp ground flaxseed meal with three Tbsp water. Mix together & let sit in your 'fridge for 15 minutes. Blueberry Baked Oatmeal - Whether you're serving brunch, your large family, or want pre-made breakfast for the week, Blueberry Baked Oatmeal is healthy and oh-so-delicious! Prep Time: 10 mins | Cook Time: 50 mins | Total Time: 1 hr | Serves 8 Ingredients... 2 tablespoons ground flax seed + 6 tablespoons warm water 2 cups whole rolled oats cup slivered almonds cup hemp seeds cup coconut flakes 1/4 cup brown sugar or coconut sugar 1 teaspoon baking powder 1 teaspoon cinnamon teaspoon sea salt cup almond milk, at room temp 1/4 cup maple syrup 3 tablespoons melted coconut oil 1 banana, chopped 1 cup strawberries, sliced cup blueberries Instructions 1. Preheat oven to 350F and spray an 8x8-inch (or similar) baking dish with cooking spray. 2. In a small bowl, combine flax seed & warm water and set aside to thicken for about 5 minutes. 3. Reserve 2 tablespoons of almonds, hemp seeds & coconut flakes and set aside. In a large bowl combine oats, remaining almonds, hemp seeds, coconut flakes, baking powder, cinnamon, brown sugar and salt. 4. In a medium bowl, combine almond milk, maple syrup & coconut oil and whisk to combine. Stir in flax seed mixture & blend until smooth. 5. Pour wet ingredients into the bowl of dry ingredients & stir to combine. 6. Layer bananas & strawberries in the baking dish and spread the oat mixture on top. Sprinkle with blueberries and the reserved almonds, hemp seeds and coconut flakes. 7. Bake for 40-50 minutes or until the top is crisp and the middle is set. Wedge a knife in to make sure the middle has thickened nicely. Remove & let cool for 15 minutes before serving. Note: To reduce the sugar, omit brown sugar and use 1/3 cup maple syrup.
