Celebrating 13,000 Foodies! Heather Laganelli here reminiscing... Five years ago when I created our Instagram account, we had zero fans. I would drive around town + pass out paper menus/ talk to businesses about what we offered. I would take menus + lemon lace cookies w/ me in my purse everywhere, SHOW people this page to encourage them to follow our journey! To think we have 13,000 people that believe in us is mind blowing! We’re super grateful for each + everyone ...of you. Swipe for of IG history : Post #1 Our first post was appetizer portions of our potato + leek soup (now available daily Jan-Feb ). I used to make it for dinner parties during the chilly winter months + my guests would rave about the flavors. Looking back to the first few posts we were still using styrofoam. The previous business we acquired had purchased enough styrofoam for almost six months. I remember how much I was conflicted w/ throwing it away or using it. Both options made me cringe Post #2 Our second post was our heaven on earth... which is still just as heavenly. Inspired by my love for peanut butter + fluff sandwiches as a child. Post #3 Sadly this sandwich didn’t meet long term relationship standards . The prosciutto + mozz baguette. I think it was too Italian for Bakersfield at the time . It’s still one of my personal favorites, in college I would order caprese salads regularly, a staple for many restaurants on the east coast. That sandwich was a spin off Post #4 Roadrunner Knife Sharpening, under the Union Station Deli gas station awning. We’ve been working w/ Carmen for 5 years now! Roadrunner comes to us + brings us replacement knives while we get ours sharpened. It’s amazing. Post #5 A charcuterie board. Yes we’ve been slinging cheese for THAT long! The original boards looked a little different than our current boards, they’ve evolved slightly . #6 Pyrenees’s Bakery A Bakersfield staple. They have been supplying us w/ our bread all these years. FAMILY Our lives are greatly impacted by our upbringing and family traditions. On this Veterans Day we pay tribute to our owner’s ancestors. @heatherlaganelli was raised in Worcester, Massachusetts surrounded by a fairly large population of European immigrants. An influential person in our owner’s upbringing was her Great-Grandma Bessie. Pictured here from left to right Bessie (her mother’s, father’s mother - did you get that lol?) in the center her mother’s mother, Marion... and her mother’s father, Angelo. Pictured to the right Bessie’s husband, Frank Servideo. Heather’s mother Susan, is the eldest daughter of EIGHT children. Shortly after her youngest sibling was born her mother, Marion had a stroke which paralyzed the left side of her body indefinitely. Story goes pre-stroke Marion wore the pants aka ran the household. Angelo her husband a World War II Veteran, didn’t drive or even have his license for that matter. Funny thing is it showed all those years later - he was a terrible driver (from Heather’s recollection ). He was a loving father, and hard worker who dedicated his days to the US Postal service, he had an interesting sense of humor and beautiful soul. After the stroke everything about their lives + household dynamic would shift. Bessie was a widow, she moved in to help with the day to day and to care for their eight children. A visit to their Stanton Street home was sure to be met with a meal topped with freshly grated pecorino Romano followed by a slice of pie of some sort. Bessie ruled that kitchen for years even after the kids moved out and had children of their own, she bread an army of foodies, predestined to love every pastry under the sun. Frank and Bessie shared a love of food and gardening, they had a massive garden when he was alive. When Heather was a child she spent a ton of time in the kitchen with Grammy Bessie you’ve probably heard us mention her a few times over the years. The history behind Locale + this dish Did you know our owner, @heatherlaganelli is the creative mind behind our menu? Back in July of 2015 she purchased Union Station Deli from Vickie + Joe Ledbetter. The couple had been in the sandwich business for ten years and were ready to retire in North Dakota. Vickie had a love for entertaining, partly due to her mother who was a beautiful soul, ahead of her time, a socialite, and world traveler. Vickie always dreamt of owning a sp...ace where she could offer her family’s fare. She opened up shop in 2005, Union Station Deli was undeniably her pride and joy. Once the change in ownership went through Heather had the keys to someone else’s dream she didn’t even eat sandwiches at the time and had zero intentions running a casual dinning restaurant. Heather had plans to turn the space into a wine bar with pairing flights and hors d'oeuvres. Ask her about it sometime! Her days were long, learning the ins and outs of someone else’s business while simultaneously developing her own menu. Heather’s creations were gradually introduced as specials for the first six months while she slowly phased out the deli options. During the summer months she created a unique salad menu. Once the weather got a bit cooler, right around this time she created this dish, our sweet potato and Brussels sprouts bowl. It was a selfish creation, since salad season had ended. The bowl didn’t make it on the menu until Candace, the manager at In Your Wildest Dreams saw what Heather was eating and started ordering it for herself. Word quickly spread and poof our most popular menu item made it’s debut. At that time Locale only existed on paper, our customer base was a mix between Union Station Deli clients and trusting millennials looking for good food. The WHY behind mural alley. Here’s a picture from the first run of murals behind Locale, did you know we have a rotating art space? We’re extremely grateful to have the ability to showcase large scale public art at our establishment. Ever since we had the ability to make decisions without clearing it through a landlord we’ve been able to get creative with our space. Creative elements are evident throughout Locale and if you take a quick stroll to the south side of our establ...ishment in the alley between 17th and 18th Street we’re currently working on a large mural. This mural space is known as @muralalleybakersfield, check it out. It’s a rotating art alley that was started two and a half years ago by our owner, @heatherlaganelli. Why does the artwork change out?!? It’s simple, artwork enriches our lives and makes an otherwise drab space interesting. There are plenty of murals that are staples in our community and hardly any that transition a space into something new consistently. We started this project two and a half years ago with the intention of giving as many artists possible an opportunity to showcase their abilities and to change the feel of the alley behind our building. As the space has developed over the years, we’ve had the privilege of getting to know a lot of artists. Heather’s intention was to create an area of interest downtown and her goal is to eventually elevate the experience as time goes on by adding an installation element, an entry sign and even lights. Slowly but surly we will put Bakersfield on the map, it’s number one on our agenda! We’ve started small and have taken it one step at a time with art, live music and locally sourced food. A little story behind our cowboy tacos... They were thought up one night when we were renovating the back dining room. One of the guys asked if we made tacos. Of course my answer was yea we can make tacos! Remember, I’m an east coast girl, we definitely didn’t make tacos. I knew there was a bag of tortillas one of the cooks brought for their lunch break, this was Union Station Deli times. My version of tacos growing up was the Old El Paso crunchy shell taco kit. I didn’t ev...en know tortillas weren’t bright yellow or that they came in a soft form until college. I had never been to Taco Bell, but clearly after watching the talking chihuahua commercials Taco Bell was authentic Mexican food . We didn’t have a Mexican restaurant in the city I grew up in or any of the neighboring towns. The first time I tried an avocado was when I was in college. I’ll never forget going to Stop & Shop to pickup avocados for my boyfriend, he said he wanted to make guacamole. I came back w/ two Butler avocados from Puerto Rico. They were the size of mini watermelons. What the heck are those, he asked?! I showed him the produce sticker that indicated they were avocados?? Flash forward 7 yrs, I had a much better understanding after living in Cali. I went into the kitchen and made what I would love in a taco. We had slow cooked pulled pork for our Cuban sandwich, I grabbed some of that, we had BBQ sauce because the former owner used to do a BBQ pulled pork sub, grabbed some of that, and scratch made coleslaw. Being in California everyone seems to enjoy spicy food except for me so I mixed in a little sricarcha sauce with the BBQ and pilled it all on a taco after warming up the tortilla (I never knew you were supposed to heat them up until college as well). They were a hit! I had about 4 other hungry men looking at me, with the what about me face. I went back into the kitchen and thought maybe that salad I’ve been making for years would make a good taco. Poof COWBOY TACOS! @heatherlaganelli + Locale make tacos, just like that. It’s Introduction Time! Hi I’m @heatherlaganelli, I started Locale back in 2015... Prior to Locale I had been working in the wedding industry doing all the things; baking cakes, photography, day of coordinating, graphic + floral design. I love the rush of weddings and sharing people’s special day. Large family gatherings have always reminded me of my family back in New England. I’m a people person (slight understatement ). My parents said since my stroller days ...I would smile + say hi to everyone that crossed my path . My lineage traces back to Northern Europe, when I was young my French Grandma, Bessie taught me how to bake. She never measured a thing. If you know anything about baking that’s not recommended. I picked up that habit + pretty much thought it was a norm. For my 7th birthday I received an Easy Bake Oven, I would add ingredients to the cute little boxes to make them my own. It taught me to think outside of the box/to deal w/ failure. Sometimes the lil cakes wouldn’t rise because I added extra chocolate or fruit or whatever I was feeling that day. I failed + perfected + kept at it. After obtaining my BA in Fine Arts from Albertus Magnus College, in New Haven, CT I moved out to CA. There’s a lot that led up to my decision to major in art, we’ll have to revisit that part of the story. I landed a job as an artist at The Bakersfield Californian + dabbled in a few other businesses until I was presented with an opportunity to open a restaurant. If you’ve known me prior to Locale you’ve definitely been over my house for dinner! I’ve been making charcuterie boards since early 2000, pairing cheese + wine since my box wine days. I’ve had a passion for entertaining for as long as I can remember. I truly enjoy the creative outlet and making things a bit more special than the norm. Entertaining consumed my life, I would wake up thinking about reasons to make new things. It got to the point when having dinner at my house came with a disclaimer my friends would tell their husbands, don’t think I’ll be doing this honey, I love you but it’s not going to happen. I’m kind of proud of that! Flash forward to 2020, here I am living in sunny Bakersfield, surrounded by potential. Life has been pretty good. Hope to see you at Locale See more

Hi! I just wanted to share something with you all! I’ve been applying for small business relief, despite my best efforts things have been rocky. Who would have thought we would have to fight for so long? Back in March I thought to myself, I’ll do whatever it takes to push through. I talked to our team and asked if they were on board. I never anticipated having to fight through for almost a year. I’m sure you have all seen how hard I’ve been working, coming up with ideas and... posting at all hours day and night. The Locale team has been troopers by my side through it all. They truly believe in me and Locale, it’s been so refreshing to see them step up to the plate. With that said, it hasn’t been enough. We still have been coming up short month over month. On Dec. 22nd I submitted a request for aide from @barstoolsports, after @sk8tingotter tagged us in a post. A representative reached out the next day, two days before Christmas and told me I had 48 hours to submit a video and some documentation (in the middle of cheese madness). On Christmas morning the president, Dave Portnoy @stoolpresidente called to let me know they picked LOCALE!!! More info to follow! For now I’m doing the happy dance! I DID IT! I’m still in awe and disbelief. Which do you prefer red or white?!! We have both available for purchase Our owner @heatherlaganelli shares her wine picks... I’ve never followed the only drink red wine in the winter rule I am a huge fan of reds. Cab is one of my go to wine choices. I also enjoy Petite Sirah, Zin and Merlot. In college I started drinking White Zin (gasp, it was back when everyone was drinking beer). In my early twenties I would go to the package store and get Sutter Home White Zinfandel lol! As a adult (are you really an adult in college, not sure?) I prefer to drink Viognier. I’m also a Rose fan. I’ve never really got into Pinot Grigio, I prefer Chardonnay over Sauvignon Blanc. My go to ALWAYS: Champagne , hands down all around favorite ! I especially enjoy @san_rucci_winery sparkling, have you tried it? We’ve been entering in as many of the small business PRIVATE aide programs as we can these days... they usually include pages of prequalifying documents and a few words from our owner about passion, hard work, community, creativity, food + connection. We decided last week that the application packets might be more impactful if we included testimonials from community members. Most of these are national aide programs and we’re one of billio...ns of applicants. We have put in some serious work nonetheless, submitting the info on a whim + a prayer . @heatherlaganelli here to share the WHY behind our existence About a decade ago I was scrolling through Trip Advisor hoping to find a NEW CREATIVE/INSPIRING place to eat. I discovered Trip Advisor at the start of my traveling days, it was my go to. I noticed most restaurants in the top twenty spots in Bakersfield were chains + I came up empty handed for a fun, creative, scratch-made spot. Ugh. This annoyed me and an itsy bitsy part of me felt I could start something in Ba...kersfield of my own that people would love... an inkling if you will . I was currently knee deep in a residential renovation, my house flooded + was in the gutted phase. The kitchen was non-existent. This was my creative outlet at the time. We’re talking fun accent walls, decorative tile on the walls, cute nooks, hanging bed side lighting, chandeliers, dimmable everything + functional newly defined spaces. My friends/family knew if they wanted to see me they would be walking into a construction zone. There was an open invitation to pull up a 5 gallon bucket, enjoy a SOLO cup of wine (that was likely to be coated in saw dust) OR they were free to make themselves useful + pick up a paint brush/tool. I was working 12/14 hours a day. My social life was nonexistent. Towards the 3rd or 4th month I was severely missing social interaction + creative time in the kitchen. My break in routine gave me some serious perspective. I started jotting down potential menu items for my imaginary restaurant. Once the kitchen was complete I started testing out recipes. Some nights I would be laying in bed and jump up at midnight to make a sandwich I knew would be amazing... that’s how the pastrami melt was born. I started to watch documentaries on food + ultimately cut out processed food. I felt a huge difference in my energy levels, which changed how I consumed food. A few years later an opportunity arose to purchase Wine Me Up while taking a baking class at BC. I put down a deposit, unfortunately the deal fell through. Shortly thereafter I was connected with Union Station Deli - you know the rest My hope was to provide our community w/ out of the box, creative + inspiring food choices. #realfood See more

I crave them allll the time now. I love that the green beans were fresh and crisp and that the breading wasn’t too heavy. And the sauce they are served with? AMAZING. Secret Menu Items In effort to help with food waste, efficiency, sourcing, prep and ticket times and the general sanity of our staff during the pandemic we opted to slightly cut back our menu. It was truly a difficult decision especially since at the time our owner adopted the YES mentality to stay relevant during one of the strangest times. We opened longer hours, added an extra day of service, we figured out ways to accommodate our fans that we had never considere...d in the past and contributed to improving our community’s well being; with a hope wall, installations, a huge kindness mural and challenge, giveaways and services we had never offered in the past. Our biggest issue at the onset of the pandemic was staffing and finding people that actually WANTED to work. We would like to acknowledge Jeremy, Mayra and Janet for sticking with us early on and pushing through with our owner during one of the most uncertain times we’ve ever know. We didn’t close, we pushed through. We made safety a huge priority and dedicated our efforts into giving back to Bakersfield . Eight months later we’re still adapting and working on a few things with staffing however, we’d like to inform you we’re offering these items listed below as a part of our secret menu!
