We have always longed for a yeast strain that makes the juiciest notes possible that can play off of the killer hops our suppliers in Yakama send our way. That’s why we always loved the Sacch Trois yeast strain, which kicks off huge, delicious tropical fruit notes, especially mango and pineapple. The only problem is that Sacch Trois is not practical to use: left to its own devices the yeast strain will convert starch to sugar and leave behind an excessively dry beer (note, n...ot juicy). So we proposed to our friends at @berkeley_yeast could you develop a version of Sacch Trois that ferments like an ordinary brewer’s yeast, but still tastes extra-ordinary? Luckily for us and the rest of the beer drinking world, Berkeley Yeast could do exactly that. The STA-1 gene that causes the over-fermentation didn’t stand a chance. Armed with their brains the size of Cadillacs and lab equipment we can’t pronounce or spell they were able to genetically engineer the removal of the gene, and with a few more tweaks and turns get the yeast strain to perform like your standard hazy/juicy strain. We’re humbled to get to work with such promising and talented people and it’s an honor to welcome them to the Losers’ Club. One year ago today we undertook a terrifying multi-million dollar investment into our quality of operations. Our growth was running our ill-equipped equipment into the ground. Our Le Mans aspirations were being suffocated by our Wagon Queen Family Truckster with a blown head gasket of a brewery. The biggest and most exciting part of this project is the 50bbl custom brewhouse made for us by our friends in the North Bay Criveller Group Not only is this brewhouse not riddled wit...h cracks like our previous one, but with the improved accuracy, safety, and workflow we could not only have better control over the quality of our beer, and the safety of our employees, but also reallocate efforts off the brewhouse to the cellar where the battle between good and bad beer is won and lost. Yup, we spent millions of dollars to make less beer but make it better. Hopefully if some of you all are interested we can continue this sneak peak into our production and the changes we made and continue to make.

We know exactly how Clark felt when he plugged in all the extension cords and the lights didn’t turn on. It hurts and It’s deflating. We created a beautiful Double IPA and a label to match. Unfortunately, we pulled a Griswold on the Lonely Orbit labels and printed them with the wrong ABV. But, just like Clark, we made it work. We may have lost our patience and cried into our masks several times while putting stickers on each can by hand. Yep by hand. The outcome is a can that is slightly less beautiful, but the Double IPA inside is just as delicious. #2020

Since Simcoe and Amarillo hops have risen to their heights of popularity we’ve witnessed the rise and fall of bleached tips, Razr cell phones, and Lance Armstrong. Hot Chocolate is an ode to the beauty that is Mexican Hot Chocolate. With a base beer consisting of a softly bittered Foreign Export Stout we then added copious amounts of Chocolate, Cinnamon, Nutmeg, Cayenne Pepper, Milk Sugar, and Ancho Chilies. All of these flavors and spice characters are backed up by a huge creamy body; however the restrained sweetness and spicy heat helps retain its drinkable nature. The upfront cayenne-induced heat is assertive, but quickly dissipates ...to the big milk chocolate character that had previously dominated the nose.
