If you’ve got a generous lemon tree, you may find yourself overwhelmed at times with its abundance. You can preserve your lemons for future use with this easy process: Cut an X shape on the top of each lemon and fill with kosher salt. Be very generous as the lemons need to be drowned with salt to break down the peel. Put in a container that is big enough to fit all lemons, but small enough to keep lemons snug. Lemons can be layered. Your lemons are ready to use after 2 weeks. Once preserved, your lemons will keep in your refrigerator for up to 2 months! Long considered a weed by westerners, marshmallow is actually a medicinal plant that is entirely edible. The slightly sweet root is eaten as a digestive support and was the impetus of the modern fluffy treat (which is now made without this plate).
