Hitohira stainless clad aogami 2 165mm nakiri with octagonal walnut and maple handle. Imagine you are Goldilocks and you come by three nakiris in those bears house. This one is just right. Middle weight but still has finesse, not terribly brittle but not wedgey either. If your knives have been with us 6 or 12 weeks don’t worry, but if it’s been 6 or 12 months best be returning our calls and emails now.... Orders have not been opened since they were finished 9months or more ago, we have no idea what’s in them.... auctions will be for unopened orders. Total mystery! Auctions will be on Instagram for 24 hours starting at 1pm Pacific time.... Bids will start at $5 and will be in $5 increments only, winners will be invoiced after bidding ends and have 24 hours to pay before they go to second highest bidder. Just have to take a minute to say how much I loved sharpening with this big Shoubudani bicolored iromono. Super smooth and buttery feeling without shedding mud faster than it removes metal, nice bright kasumi finish with just water and elbow grease, similar to how you would use a synthetic stone (without soaking), but if you don’t add extra water and use the mud generated through sharpening with small stones lightly the finish gets even finer. Super easy to use and very easy ...going. A stone this size will last many many many years, natural stones outlast synthetics many times over and in the long run, end up less expensive. New old stock K Sabatier 5.5 plat semelle office knife. Essentially a super stout utility knife made for small butchery and general utility work. Check out the width of the blade above the heel, this is a bulge created in the center where the blade was drawn out in one direction and then flipped around and the tang drawn out in another. On the old plat semelle knives this bulge was forged down a little to be a simple wide point that adds extra strength at the weak point of ...the blade. The origins of the full bolster on western knives is in that spot where finer knives would have decorative grinding done at this bulge. Ostentatious grinding and handle work was done on knives used in entertaining by the swells of old, but knives like this were all business. This office knife is 100% work knife and wasn’t made to impress anyone but the cook who would be using it to break down small game and do a million other jobs where a stout little knife is just the thing.
