Blast Freezing Tips #3 Did you know...In a blast freezer like the Koma Mistral model, the rule of thumb is that we need about 1 hour of blast freezing time for every 1/2 inch of distance to the core. So, a round product that is about 2 in diameter will need about 2 hour blast freezing time. This is to go 68F (20C) to 0F (-18C). The best way to know the time you need to blast freeze your products is to use a temperature datalogger and seeing the cooling curve specific to your products.
