Tonight I looked in the refrigerator & there we’re five ingredients. Do you ever have nights like this? The bacon I’d promised for dinner, had been eaten as a after school snack. As a busy single mom, one thing I’ve gotten good at is feeding my family healthy food on a dime! One bag of frozen edamame later & tuna veggie roll ups with the remnants of the vegetable drawer, my boy said to me dinner was really good tonight. It’s really the simple things.

It's easy to eat well when it tastes good! Spring Detox Pesto 1 Bunch Cilantro (stems removed) 5 Green Onion Spears ... 1 Cup Fresh Spinach 1 Avocado 1 Dash Sea Salt 1/4 tsp Cumin 1 tsp Coconut Oil Pulse greens on medium in Cuisinart, add avocado, coconut oil, cumin and salt.
