Tenders aren't just for kids! This fast, easy #recipe for our Cauli Crunch #ChickenTenders is a fan favorite. Whether you need a fast, stealthy healthy protein fix or you're prepping an after (virtual) school snack, this nips those fried chicken cravings in the bud. #Vegan adaptations in recipe below! What sauce would you dip? Cauli Crunch Chicken Tenders Plating with mashed potatoes and sauteed broccolini.... Ingredients 1 lb chicken breast (sub: plant-based faux chicken) cut into tenders 1 Tbsp smoked paprika 1 Tbsp garlic powder 1 tsp black pepper 1 tsp salt 1 cup Cauli Crunch cup grated parmesan cheese (sub: vegan parmesan for plant-based) (Follow Your Heart) cup fresh parsley, minced Optional: pumpkin seeds 3 eggs (Farm Fresh Eggs) Avocado oil spray Instructions Preheat the oven to 350 F. Combine Cauli Crunch, parmesan cheese and minced parsley and dry ingredients in a food processor. Blend for 10-20 seconds until ingredients are evenly mixed and pumpkin seeds are chopped. Place dry ingredients in a medium bowl. Whisk three eggs until light yellow. Dredge each piece of chicken first in egg wash, then in dry ingredients, pressing down for a thorough coating. Place coated pieces on a lined or greased cookie sheet. Lightly spray the top of each piece with avocado oil spray so that the breading is slightly moist and will brown evenly. Bake for 8-10 minutes until crispy or internal temperature reaches 170 degrees. Serve immediately. Optional: Finish with a squeeze of lemon and a side of your favorite dipping sauce.
