TASTY TUESDAY: Walnut Garlic Crisps Total Time 15 Mins Serves 12 DESCRIPTION Easy recipe for toasted bread crisps topped with crunchy walnuts and parmesan cheese. Pair with a green salad and your favorite pasta dish.... INGREDIENTS 1/2 cup California walnuts, chopped 1/2 cup Parmesan cheese, grated 4 tablespoons olive oil or butter 1/2 teaspoon garlic powder 1 loaf French bread (1 pound loaf), cut into 12 slices PREPARATION 1. Heat oven to 450F. 2. Place walnuts, Parmesan, olive oil or butter and garlic powder in a medium bowl. Mix with a wooden spoon until completely combined. 3. Slice bread into 3/4-inch thick slices. Place bread slices on baking sheet. 4. Spread about 2-3 teaspoons walnut-parmesan mixture on bread slices. 5. Put in oven and bake about 5 minutes. Watch carefully, checking after the first 4 minutes. Remove from oven when walnut topping is bubbly and lightly browned. Tips: For easy clean-up, bake toasts on aluminum foil lined baking sheet. Refrigerate any leftover walnut-parmesan mix. Use for Walnut Pasta Toss (see recipe below). Walnut Pasta Toss: Cook favorite pasta in boiling water according to package directions. Two minutes before the pasta is done, add 1/2 cup frozen peas (or other favorite vegetable) for each serving. Drain. Stir 1-2 tablespoons of walnut-parmesan mix into hot pasta. TASTY TUESDAY: Banana Walnut Donuts with Maple Glaze Total Time 40 Mins Serves 10 Serving / Size 1 donut DESCRIPTION... There’s no better way to start your morning than by making a tray of freshly baked Banana Walnut Donuts with Maple Glaze. The rich aromas of cinnamon, nutmeg, and maple will be enough to get your mouth watering! INGREDIENTS DONUTS 1 1/2 cups all-purpose flour (may substitute 1:1 gluten-free flour) 1/2 cup brown sugar 1 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon kosher salt 1/2 teaspoon cinnamon 1/2 teaspoon nutmeg 1/3 cup mashed ripe banana 2 tablespoons coconut oil, melted 1/2 cup buttermilk (or non-dairy milk) 1/2 cup toasted chopped California walnuts MAPLE GLAZE 1 cup powdered sugar 1 to 2 tablespoons milk (or non-dairy milk) 1 teaspoon maple extract 1/4 cup toasted, finely chopped walnuts for garnish PREPARATION 1. To make donuts, preheat oven to 350F and coat 10 donut pan cups with nonstick baking spray or coconut oil. 2. In the bowl of a standing mixer fitted with a whisk attachment, stir together the dry ingredients. Add the banana, coconut oil and buttermilk and beat on medium speed until well combined into a smooth batter. Fold in the walnuts. 3. Spoon the batter into a large resealable plastic bag. Snip the corner off of the bag and pipe the batter into the donut cups. Bake for 12 minutes until the donuts are just cooked through. Let cool, then place on a baking rack until completely cool. 4. To make the maple glaze, whisk together all glaze ingredients in a small bowl until smooth. (Glaze should be fairly thin, but thick enough to stay on the donut.) Immediately sprinkle with walnuts. Serve right away or store in an airtight container. TASTY TUESDAY: Sichuan Green Beans with Walnuts Total Time: 25 Mins Serves: 6 Serving Size: about 3/4 cup DESCRIPTION These Sichuan Green Beans are packed with spicy flavor from chili garlic sauce, ginger and Sichuan peppercorns. Walnuts add toasty flavor and texture. INGREDIENTS... 1/2 cup California walnuts, coarsely chopped 2 tablespoon vegetable or canola oil 1 lb fresh green beans, ends trimmed 1 (2-inch) long narrow piece fresh ginger, peeled and very thinly sliced 2 garlic cloves, thinly sliced 1/2 teaspoon Sichuan peppercorns 3 tablespoons soy sauce 2 to 3 teaspoons chili garlic sauce 1 tablespoon rice wine vinegar 1/2 teaspoon sugar 2-3 medium greens onions, sliced Sesame seeds (garnish) PREPARATION 1. Place walnuts in a large skillet and cook over medium heat for a few minutes to lightly toast; remove and set aside. 2. Add oil to skillet and heat over medium-high heat. Add green beans and cook for a few minutes or until just starting to soften, tossing frequently. Stir in ginger and cook for 1 minute more. 3. Add soy sauce, garlic, chili garlic sauce, rice vinegar, peppercorns and sugar; cook for 3 to 5 minutes or until some of the excess liquid has cooked off and green beans are saucy and crisp-tender. Stir in green onions and remove from heat. 4. Sprinkle with walnuts and sesame seeds.
