This is a class originally designed to get the men and women of the culinary industry some hands on experience with whole animal butchery. With the added bonus of staying in a beautiful setting and classes set in the middle of the week to stay away from the busiest times of restaurants and caterers, chefs and cooks alike can take a relaxing break from their crazy lives as well as learn something highly useful and interesting.
