Chimu fans, you take way better pictures than we do! This is the Big ol’ Dipped Quesadilla. It’s the second most popular item at Chimulita. Chimulita Gourmet Grub almost never happened. It all started with a question: If you could own a food business, what would it be centered around? Maria answered quickly. I love waffles! Naturally, it was one of her favorite foods. This sparked months of R&D around flavors, varieties, pairings and whatever else we could think of. We saw a few trucks around the country doing well with chicken and Liége waffles. A heartier Belgian waffle, Liége waffles held together better for c...hicken and waffle sandwiches. That was it! The recipes were ready. The theme was ready. We were ready. Next, we needed to fund some startup costs. On a whim, I entered us in a cooking contest. I eventually told her WE were entered in a contest. (Whoops!) Luckily, I lived to see another day. When we received the notification that we were accepted into the competition, we figured, what’s the worst that could happen? From there, we embarked on what was one of the most gruesome days we’ve ever experienced. Ten hours of competitive cooking against the top talent in the region. The competition was a mystery basket, chopped-style format, with each round being more difficult than the previous one. The Food Network’s Jeff Mauro was the host, which made it even more intimidating. Somehow, we were still standing in the final round. But it wasn’t until we heard Hard Water, the nickname Chef Mauro had given us, that we realized we had won! It was surreal. We were deeply grateful. The competition earned us $3,000, which we used to buy equipment and supplies to start a booth at the local farmer’s market. It was there that we tested out our chicken and waffle sandwiches. Then came the Waffle Craves food truck. The love was overwhelming. But then things took a turn. ### Next Monday 1/11. The rest of the story. See more
