Here is restorative cleaning performed on a Peruvian restaurant last night. The grease generated by Peruvian cooking can be deceptively difficult to remove. There is a very popular cuisine in Peru called chifa which is a Peruvian-Chinese fusion. This creates a rubber cement type grease that requires a lot of scraping to remove.
