Have you met Chef @t.ian.bens . Chef Ian Bens is no stranger to a kitchen. Born and raised in Canada, at the age of 16, he began crafting pizza and cooking wings in a kitchen in downtown Calgary, Alberta. Bens went to culinary school at Southern Alberta Institute of Technology in Calgary. He moved to Banff, Alberta for a two-year apprenticeship at Canada’s Castle in the Rockies, the iconic Canadian landmark luxury mountain resort. . Battle-tested in the kitchens of Banff... Springs, Bens relocated to British Columbia and rose through the ranks for Dunsmuir Lodge & Sooke Harbour House. Located seaside on the tip of Vancouver Island, the esteemed Sooke Harbour House focuses on extreme local, natural, and sustainable food processes. Each morning, Bens harvested the 3-acre rare herb & edible blossom garden for herbs and flowers; and the ocean for shellfish and seaweed to be used for the nightly menu. . In 2000, Bens worked alongside renowned Canadian-born Executive Chef Daniel Buss, where they opened the Fairmont Banffshire Club Restaurant in Alberta together. With high-end luxury cuisine like live king crab, sea urchin, foie gras, truffles; and, game such as; elk, caribou, deer, and wild boar, this dynamic duo brought AAA 5-Diamond and Mobile 4-star ratings within two years of opening. From there, he traveled to NYC to lend his talent in the re-opening of The Plaza Hotel, and did a stint at The Fairmont-Georgetown in DC before heading to the west coast with Fairmont to The Claremont Hotel in Berkeley. . In 2016, he obtained his permanent residency in the US, and joined the Wine & Roses team- first as a Sous Chef in Towne House, and then as the Restaurant Chef at Rosewood Bar & Grill, our sister restaurant. In 2019, Bradley Ogden relinquished the reigns to Chef Ian as the Restaurant Chef of Towne House. . He is headed to Las Vegas, Nevada to team up with his son, Bryan Ogden, the Corporate Executive Chef with the Sugar Factory Company. The opportunity to unite with his son will also afford Chef Bradley t...ime with his young grandson and family, something that has been hard to come by in his illustrious career. . Chef Bradley has brought an incredible mixture of experience, education, and foresight to the Wine & Roses culinary program. He is a gifted culinary talent that has ignited energy and enthusiasm in our team, and elevated our culinary mission and vision through his expertise.
