Our featured wine today is Barbaresco ‘Auntinbej.’ Chef Luca Maderino believes this wine represents the soul of Italy. This wine works incredibly well when it’s paired with food. He says: It’s elegant and when it’s paired with the right dish it explodes on the palate. Made from the Nebbiolo grape the Austrian General Melas drank it to celebrate his victory over the French in 1799. It has tasting notes of black cherry, spice, menthol, licorice and dried flowers. You’ll love it with our Ribeye Tagliata!

Ribeye Tagliata is a simple mouth watering dish that is an Italian classic. The word tagliata derives from the verb tagliare, to cut. When the meat has been cooked it is cut diagonally into slices, no thicker than one inch. Our chef Luca Manderino believes meat shouldn’t be expensive. When preparing your Ribeye Tagliata, he puts a layer of salt and pepper on it first, then sears it at a high temperature so it stays rare inside. Our winelist spotlight today is on Fontodi Chianti, one of our more popular reds. This wine has deep fruit notes and mineral flavors. It's deep crimson color, and we love to serve it at Sosta Cucina with cured meats. In Italy, it's often served with wild boar. It comes from one of Tuscany's most celebrated winemakers. The Sangiovese grapes it's made from grow in an area nicknamed the 'golden shell.' The land has excellent exposure to the sun with soil, including a mix of clay..., limestone, and shale. When you take a sip of Chianti, you think of cherries, violets, leather, and vanilla. It is a straightforward wine on the palate and is best enjoyed with hearty, simple food. Crudo Di Dentice, which is our Crudo of New Zealand Snapper with olive oil, is one of our very popular starters. This dish is fresh, meaty, and light. We make our own chili oil at Sosta Cucina, which gives our Snapper Crudo a little kick. Snapper has a higher fat content than Branzino, which is European sea bass. The word 'crudo' refers to the Italian word for raw. The term crudo can apply to raw beef, or seafood as well as fish. Don't get it mixed up with 'ceviche', which originates in central and South America. Ceviche is a particular dish and always includes seafood, which is marinated in lime juice.
