As the sun sets on 2018, we look back and count our blessings. From the LEED Platinum certification of our new Alexander Valley winery to the releases of our 2013 Napa Valley Cabernet and 2014 Alexander Valley Cabernet, we have so much to celebrateand so much to look forward to in 2019. Extended aging happens both in our cellar and at our cooperage, The Oak. To achieve 12-14 percent moisture levels for liquid-tight barrels, we air-dry (or season) our American oak staves. "Natural drying allows rain and other elements to reduce the tannins in the wood, softening the flavors," says Silver Oak winemaker Nate Weis, who is visiting The Oak in Higbee, Missouri. "The seasoning process also results in pliable wood that can be molded into barrels without splintering."
