Here's a lunchtime meal to give you the warmth and spice to keep you going through the remainder of the day!... 1-cup uncooked rice ( jasmine or basmati) 2-cups diced bell pepper 1-cup onion 1-jalapeño (from PepperKings of course ) 1-clove of garlic 2-tsp of avocado oil or olive 4-cups of vegetable broth* 14.5 oz canned fire roasted diced tomatoes 14.5 oz canned tomato sauce* 1-tsp of black pepper 1-tsp salt-free Italian blend seasoning (PFC SEASONINGS of course) 1/2-1/4 tsp garlic powder 1/4 tsp dried oregano 1/4 tsp red pepper flakes 1 cup dry red lentils A majority if these items can be found at our local farmers market days(see images for dates and times) Hope you enjoy this meal recipe.
