It’s almost grilling season spinach & feta turkey burgers + creamy cauliflower mash is a meal by @sara.haven if you’re looking for a couple deliciously simple + satisfying recipes to meal prep this week, give these a go and let me know what you think! SPINACH & FETA TURKEY BURGERS: these burgs were a huge hit with my family when I first made them last year, and they’ve been in my regular meal rotation ever since. I like to meal prep both the burgers and the mash in adva...nce, and enjoy leftovers for lunch throughout the week) 1 lb. ground turkey (I recommend 85-90% lean; if you go any higher, your burgers will likely be dry) 3 cloves garlic, minced 4 oz. feta cheese 2 cups chopped spinach 2 tablespoons fresh parsley, chopped salt & pepper, to taste 1) combine all ingredients in a bowl and mix gently with hands, until thoroughly combined. Shape turkey mixture into four patties; set aside 2) In a large pan or skillet, heat 1 tablespoon avocado oil on medium high heat for ~1 minute; add burgers and cook on each side for 7-8 minutes, or until no longer pink in the center. - CREAMY CAULIFLOWER MASH: 1 head cauliflower, chopped 3 garlic cloves 3-4 tablespoons unsweetened milk 1/4 cup parmesan cheese 1-2 tablespoons ghee 1) in a large pot with a steamer basket, steam garlic and cauliflower until tender; add to a food processor along with remaining ingredients; blend until smooth.

I changed it up a bit today from the usual and made myself a good old classic chef salad for Romaine lettuce with turkey, ham, hard boiled egg , Colby cheese , cucumber , grape tomatoes and red onion seasoned with sea salt and cracked black pepper. Typically I would smother this in ranch dressing but decided to keep it on a lighter note with olive oil and lemon juice. It was a pretty big salad so I only ate half and saved the other half for later. ... So much yum! Hope you’re having a great day.

Brie Spaghetti with seared scallops and roasted broccoli! By @sailor_bailey This Brie pasta is REALLY easy & fun to make, watching the brie bubble and melt into the noodles will make you drool immediately! . Ingredients * 3 cups cooked angel hair pasta (about 1 pound)... * cup chopped parsely * 8 oz brie In a wheel shape for best results can be cut in half. * 2.5 tbsp olive oil * 8 oz package of mushrooms (about 1.5 cups) * cup chopped yellow onion * tsp salt & pepper (or more to taste if desired) * 1 tbsp minced garlic = 3 cloves Instructions * Start cooking pasta according to package. Set oven to 350 degrees. * Cut the top of the brie rhind off with a pairing knife and discard. Place it in an non stick oven safe dish. I prefer a well seasoned cast iron skillet. Place in the oven and back for 15- 20 minutes or until it is bubbling and brown. * While pasta is cooking, add olive oil, pasta, parsely, salt, pepper, garlic to a large bowl and whisk together. * In a pan add tbs of oil or butter and sautee mushrooms and onions until golden brown. Set aside. Add them to the pasta once the pasta is fully cooked. * When pasta is fully cooked, toss in the olive oil mixture gently with mushrooms and onions. * When brie is done, place pasta mushroom mix directly onto the melted cheese and carefully mix it evenly. Garnish with a bit more salt and parsely and serve! See more

Some smoked chili lime tofu. Paired this with avocado, Organic White Jasmine Rice, greens, and sautéed bok choy, mushrooms and peppers in soy sauce and chili lime seasoning. Smoked Chili Lime Tofu 1 block extra firm tofu, drained and pressed 2 tbsp low sodium soy sauce... 2 tsp garlic hot sauce 1/4 tsp garlic powder 1/2 tsp smoked paprika 1/2 tsp chili lime seasoning. Preheat oven to 400F. Once tofu is pressed, cut into cubes. In a bowl combine all ingredients except tofu and mix together evenly. Add in tofu and with a spatula toss together until tofu is fully coated. Place tofu on a lined baking sheet and place in the oven for about 25 minutes. See more

This turkey soup stays great refrigerated for 3 days, or frozen for up to 2 months. makes about 6 servings Ingredients: 2 Tbsps olive oil, avocado oil, or ghee 3 medium carrots, peeled & diced 1 large onion, diced 3 fresh garlic cloves, minced 3/4 cup uncooked brown rice, rinsed 4-5 cups leftover turkey, chopped 8 cups chicken or turkey bone broth 2 cups frozen organic peas, rinsed/thawed 1/4 cup finely chopped fresh dill or 2 Tbsps dried dill weed 1 large fresh lemon, juice and zest 1 cup unsweetened coconut milk, or almond milk 2 Tbsps gluten free flour, Arrowroot powder, or cornstarch sea salt and ground pepper, to taste, about 1/4 teaspoon each Instructions: Heat oil in a large stockpot or dutch oven. Add in all of your chopped veggies and sauté the carrots, onion and garlic for 3-4 minutes. Add the broth and brown rice, reduce your heat to a low simmer, and cover with a lid. Cook until rice is tender, about 25 minutes. Meanwhile in a small bowl, whisk together (really well) the almond milk and flour/cornstarch until no lumps are visible. Once your rice is tender, stir in the milk mixture, turkey, and peas. Continue to simmer for 5-8 minutes, or until soup thickens a bit. Add in your fresh lemon juice, zest, and dill, then taste test, and season with sea salt and pepper if desired. Serve hot and enjoy!

Epic Baja Fish Tacos with Avocado Crema By @joyfulhealthyeats * 2 lbs. cod filets * 2 tablespoons avocado oil * 1 teaspoon garlic powder... * 1 teaspoon smoked paprika * 1/2 teaspoon ground cumin * 1/2 teaspoon sea salt * 1/4 teaspoon ancho chili powder * 1/4 teaspoon ground black pepper * 16 corn tortillas * cooking spray * optional: fresh pico de gallo Cabbage Slaw: * 2 cups green cabbage, thinly sliced * 2 cups purple cabbage, thinly sliced * 2 tablespoons lime juice * 1/4 cup chopped fresh cilantro * 1 teaspoon honey * salt & pepper to taste Avocado Crema: * 2 avocados * 1 garlic clove * 1/4 cup fresh cilantro * 1/4 teaspoon cumin * 1/8 teaspoon red pepper flakes * 1 1/2 tablespoon lime juice * 2 tablespoons red wine vinegar * 1 tablespoon olive oil * salt to taste Instructions Cilantro Lime Cabbage Slaw: 1. To a large bowl, add green cabbage, purple cabbage, 2 tablespoons of lime juice, cilantro, honey, salt and pepper. Gently toss to coat and set aside. Avocado Crema: 1. To a food processor add, avocado, garlic, 1/4 cup cilantro, cumin, red pepper flakes, 1.5 tablespoons of lime juice, red wine vinegar, olive oil and salt. Blend until smooth and looks like a puree or dressing. Set aside. Baja Fish Tacos: 1. To a small bowl, add 1 teaspoon garlic powder, 1 teaspoon smoked paprika, 1/2 teaspoon cumin, 1/2 teaspoon salt, 1/4 teaspoon ancho chili powder and 1/4 teaspoon ground black pepper. Stir to blend everything together. 2. Season both sides of cod with spice blend and gently rub in. 3. Heat a large non-skillet skillet to medium high heat. 4. Add avocado oil to pan once hot and immediately add season cod. Sear each side for 2-3 minutes. (the cod is done when it is still white in the center and gently flakes apart) 5. Remove cod from pan and set on a plate to rest. 6. To heat corn tortillas: heat a skillet to medium high heat, spray both sides of tortilla with cooking spray and cook for 1-2 minutes on either side until browned. 7. Assemble Baja Fish Tacos: To one heated corn tortilla add 2 tablespoons of avocado crema, 1/3 cup slaw, 2 oz. of cod and (optional) pico de Gallo

This CREAMY TOMATO PENNE with SEARED SCALLOPS is dinner made easy! * Ingredients * 1 lb. penne... * 8 ounces scallops * 2 tablespoons olive oil +extra * 3/4 cup shallots diced small * 3 cloves garlic minced * cup white wine * 1/2 teaspoon salt * 2 tablespoons tomato paste * 1/2 cup tomato sauce * 1 can coconut milk 13.5 ounces * 1/2 cup parmesan cheese grated * 1.5 tablespoons butter * 1-2 tablespoons fresh chopped Italian parsley * Black pepper & Red pepper flakes to taste Instructions * Boil a pot of water and cook the pasta until al dente. * Once the noodles are ready, drain, rinse them with cold water and drizzle the noodles with olive oil so they do not stick together. Set aside. * Next, Remove the scallops from the refrigerator and let come to room temperature, peel the heel off of the scallops. Once removed, pat the scallops dry with a paper towel. * Season both sides with salt and set them aside. * Heat a castiron skillet over high heat. spray it with cooking spray and add the scallops. * Let the scallops cook for 1.5- 2 mins on each side. This will give you a golden-brown sear. Remove scallops from the pan and set them on a plate. Set aside. * Next, In a large sauté pan with sides, add the olive oil, shallots, garlic and salt. Over medium heat, let the ingredients get tender and begin to brown. * Next, you’ll deglaze the pan with white wine. Once the wine reduces by half, add the tomato paste. Stir until well combined. * Next, you’ll add 1 can of coconut milk and cup of tomato sauce from a can. Season all. Stir over low heat until well combined. * Add the parmesan cheese and 1.5 tablespoons of butter. Stir until the cheese is fully melted and incorporated into the sauce. * Finally, you can add some fresh chopped #Italian parsley into the sauce. * Add the penne pasta into the pan. Toss everything together. Add saucy noodles to your favorite serving dish and nestle in the scallops. See more

Slow Cooker White Chicken Chili One of my very most favorite cold-weather meals! I'll have Crockpot, Instant Pot, and Stovetop Instructions up on the website this week!... 8 servings Ingredients: 1 Tbsp olive oil, or avocado oil 1 medium yellow onion 1 green or red bell pepper 2-3 fresh garlic cloves, minced 1-1/2 lbs. chicken tenders 1 jar (4 ounces) chopped green chiles 2 tsps ground cumin 2 tsps dried oregano 1 tsp cayenne pepper 2 cans (14.5 ounces each) great northern beans, drained 4 cups chicken bone broth 1/2 cup shredded white cheddar cheese Optional toppings: additional shredded cheese sliced jalapeno chopped cilantro chopped avocado lime wedges Instructions: For Slow-Cooker: Finely chop your onion and bell pepper. Heat oil in a pan over medium heat. Add onion, bell pepper and garlic; sauté until they just begin soften, then transfer to the slow cooker. Add in the chicken tenders, chopped green chilies, all spices and beans. Pour in the broth and gently stir to combine. Cover and cook on LOW for 5-6 hours or on HIGH for 2-3 hours. Once the time is up, remove the chicken and shred with the help of two forks. Place your shredded chicken back into the cooker, along with the shredded cheese. Stir to combine, taste test, then add sea salt and pepper, if desired. Transfer your chicken chili to serving bowls. Add toppings of choice and serve.

Chili Lime Shrimp Salad Because you're gonna require several QUICK, EASY, fresh meals that are straight fire, to keep in your arsenal this week! You've got just a few minutes?...You've got enough time make this! ... makes 4 servings Ingredients: 1 lb. raw shrimp, peeled and deveined 6-8 small red chilies 1 Tablespoon avocado oil, or olive oil 8 cups mixed baby organic greens 1 large avocado, chopped and drizzled with fresh lime juice to prevent browning 1 English cucumber, chopped 1 cup cherry tomatoes, halved 1 small red onion, sliced For the dressing & marinade: 4 Tbsps olive oil, or avocado oil 1 tsp chili powder 1 tsp smoked paprika 1 tsp garlic powder 1 tsp onion powder 2 small limes, juiced 1 tsp raw honey sea salt and fresh ground black pepper, to taste (about an 1/8 teaspoon each) Instructions: Start by whisking all the dressing/marinade ingredients in a small bowl. Add 1/3 of the mixture over your raw shrimp and gently stir to coat. Marinate for at least 15 minutes if time allows. Set aside the remaining, untouched, unused dressing to toss later with salad. Heat 1 Tablespoon oil in a large non-stick pan (I used cast iron for that nice blacked flavor and color) over medium heat and once hot, and pan is evenly coated with oil; add in your marinated shrimp, and chilies in a single layer. Saute shrimp and chilies for just 3-4 minutes, or until opaque in color. Remove from heat. To assemble your salad, add the greens into one large salad bowl or platter and toss them with the remaining, untouched dressing. Alternately, you can assemble 4 separate serving plates or bowls evenly, and nicely with your prepared ingredients. Top with cooked shrimp, cucumber, avocado, cherry tomatoes and red onion. Garnish with the blackened chilies and enjoy!

Simple Salmon Piccata A super IMPRESSIVE Sunday Dinner idea that is pretty darn easy to make! Serve over rice, with a side of roasted broccoli ... makes 4 servings Ingredients: 4 ,(5 or 6-ounce) wild caught salmon fillets sea salt and fresh ground black pepper, to taste, about 1/4 teaspoon each 2 Tbsps ghee, or clarified grass fed butter 3 fresh garlic cloves, minced 1/2 cup white wine 1/2 cup chicken bone broth 1 Tbsp gluten free flour or potato starch 4 Tbsps capers juice of 1 small fresh lemon zest of 1 small fresh lemon fresh parsley leaves, chopped additional fresh lemon slices to garnish Instructions: Sprinkle your salmon with sea salt and pepper, then rub it in on both sides. Melt the ghee in a large skillet over medium heat. Add in your salmon fillets and cook for 4 minutes on each side, or just until cooked through and flaky. Remove salmon from pan, and set aside on a large platter. Cover. In that same pan, add in your minced garlic and cook about 1 minute. Stir in your white wine and simmer until wine is reduced a bit, about 3 minutes. Meanwhile, in a small bowl whisk your broth with the flour/starch until well combined. Pour this mixture into the hot pan while stirring until everything is combined. Finally, stir in capers, lemon juice and your fresh lemon zest. Bring everything to a low simmer and stir constantly until sauce thickens, about a minute. Return the salmon back into your skillet, and cook for a couple of minutes until fish is hot throughout. Sprinkle with fresh chopped parsley and enjoy!
