A trick to ward off the alcohol buzz? Apparently if you consume Bread Yeast prior to a night of paced drinking (not binge drinking), you are more likely to feel LESS buzzed/drunk and therefore, less hungover the next day. Brettanomyces, often called "Brett", is a dangerous and lovely BEAST! If you make beer, this is your wild beast of yeast. Brett is the ferrari of yeasts. Not ...everyone can handle it, but those who brew, dream of taming it and making some awesome Belgian inspired brew with it. Winemakers on the other hand, are not thrilled with "Brett". Better yet, they are ab-so-lute-ly scared of Brett. Brett give off sulfur dioxide and contributes to "corked wine", but like an outbreak of a dangerous pathogen, "brett: can contaminate EVERYTHING in a winery. Once it is found in equipment, barrels and the like, you are in big trouble. You will need to turn your winery and wine handling areas into "clean rooms" and replace EVERY piece of equipment before you do that. Save those Brett infected barrels though. Brewers would love to take them and age their beer to see what crazy "funk" the Brett can cause. To give you a sense of the winemakers leerieness and foreboding of it, in Temecula, California, our hometown winery guilds were very much NOT in favor of new breweries being built anywhere near them. The breweries can get no closer than 6 miles away to the west. Ironically, the breweries are upwind... Loved. Feared. Maligned? Brettanomyces is the beast yeast! HYDROMETER AND REFRACTOMETER NOT ADDING UP? This could be why... IMPROPER CALIBRATION: "I think I have FINALLY found a significant issue regarding the issue of difference between hydrometer and refractometer readings.... If you have tried both you might see they give you different readings when measuring SG/Brix in must. I used http://www.brewersfriend.com/brix-converter/ but no, my readings does NOT match what the calculater(s) say. My refractometer sais 10.8, but hydrometer sais 1.046 According to the calculator, the hydrometer SHOULD say 1.043 when measuring 10.8 brix ... and then I had an idea; YOU NEED TO CALIBRATE YOUR HYDROMETER. Whaaaaaaat? Calibrate hydrometer? You ask. Yes!! Hydrometer measures density of fluids. People assume water is 0 (1.000). Well, yes PURE (distilled water or reverse osmosis) water. BUT you probably do NOT use PURE water do you??? Noooo...... Where I live the tap water is bone hard. This is due to minerals in the water (this is especially bad in the southwestern USA where water travels 100's of miles to reach concrete or rock reservoirs). First, You need to hydrometer check the water you want to mix in. Mine said 1.003 - no sugar. Its just because its hard water. Try adding table salt to the water and see what happens OK - I now mix water in the juice - AND WAIT. You cannot get a correct reading the first few minutes. This is because there will be a load of air in the must now. If you have seen the show - I think its called "myth busted" - the ugly red haired guy was swimming in a swimming pool where they made lots of air bubbles under him and then the ugly guy with the hat and fake mustage measured what happened. He was sinking! You would think lots of air in the must would drive UP the hydrometer - but its opposite. So, wait a few minutes. As mentioned above the hydrometer measured 1.046 and the refractometer 10.8 I now use my calculator to deduct 1.046 with the hard water measurement of 1.003. I get 1.043. Do you agree? Using the brix/Gravity calculater, it now ads up.. Voila - one of the biggest homebrew problems solved. I await a Nobel Prize for this!" (Credit to Lauritsen @ HomeBrewTalk.com for this gem of info) CLEAN THAT THING! Another tid bit of information to add is to CLEAN your hydrometer with isopropyl alcohol. Just like your shower, the water and wort can leave behind a film of deposits that can effect future readings. Swirling the Isopropyl Alcohol and then using a paper towel to clean out the excess and wipe the sides is a great way to ensure that it is ready for the next brew day. Hydrometers are not the authority on Refractometers. Cleanliness trumps them all!

You might think that SG is SG, but in refractometers all is not what it seems... Brix Refractometers are designed for measuring sugars in liquids, and the % Brix readings that the Refractometer yields correlates linearly to Sugars in water Specific Gravity. Salinity Refractometers are designed for measuring Salinity in ppt and Salinity Specific Gravity. The salt in water ppt readings correlate linearly to Salinity Specific Gravity. The same is true for Clinical Refractometers. They measure the Urine Specific Gravity in humans and animals. Each style of refractometer is geared towards their own linear relationship with Specific Gravity. A Brix (sugar) refractometer that has a specific gravity scale can only be helpful for Brix. The same goes for salinity and urine specific gravity. This is a fairly common question, and I completely understand where you are coming from.
