Inspired by my farmer’s market haul, I whipped up a veggie pancake. It’s surprisingly easy and delish. Shred leeks, carrots, zucchini, and carrots cabbage and mince 2 garlic cloves. In an 11 pan over medium high heat, sauté leeks and garlic first. When soft, add all other veggies and sauté, stirring occasionally until golden brown. Meanwhile in a mixing bowl, combine 1 cup chick pea flour with 1 cup water, 1 teaspoon salt and leaves from 5 fresh thyme sprigs. Whisk to com...bine. Consistency should be like cream. Pour batter over veggies, and tilt pan to spread and cover veggies. Cover pan with lid and cook about 3 minutes. Flip pancake, or cut into quarters and flip each piece. Do you miss crunchy panko breadcrumbs because you’re gluten free? My healthy chicken nugget crumb is a combo of organic brown rice crisp cereal, almond meal, and coconut flour (in that order of quantity from most to least). Then add to crumb mix: salt, crushed red pepper, garlic powder, thyme or oregano. Dip chicken pieces in egg, then coat with crumb. Bake on sheet pan with thin coat of olive oil in 350 oven for 15-20 minutes depending on size of nuggets and oven variability. Cut into nugget to be sure it’s done. Enjoy the crunch!
Oh my! Tahini strikes again as miso-tahini-white wine vinegar sauce under roasted sweet potato wedges. Topped with toasted sesame seeds and fresh, chopped scallions. No leftovers!
Wow! This sesame tahini banana bread from @kalejunkie is such a surprisingly delish combo of sweet and savory and a little pop of crunch from the sesame seeds. Great for breakfast, dessert or a snack (or all 3that’s what I did in a day!) and did you know that tahini is loaded with calcium?? Even better.
Such an interesting idea my son brought back from London: Fill a crepe (gluten-free here of course) with carmelized onion slices, mushrooms, spinach, walnuts all sautéed in a bit of olive oil. Add tahini and a dash of hot sauce and you’ve got a sweet, savory, spicy, nutty, delicious crepe. We had ours for breakfast.
Two quick dips that satisfy the senses. Guacamole: 2 avocados, juice of 1 large lemon, and 1/2 t salt. Mash. That’s it! And in the food processor: herb hummus made with one 15.5 oz can organic chickpeas, rinsed, 1 large clove garlic, juice of 2 small lemons, 1/4 c olive oil, handful of cilantro + 1 T fresh rosemary (or other herbs), and about 3 T sauerkraut juice if you have it to make this gut-happy hummus!

Toss to coat Yukon Gold and/or sweet potato sticks in olive oil and salt on a sheet pan, and roast at 425 degrees for about 25 minutes. Elevate them further with chopped shallots sautéed in lemon juice and olive oil until soft.
