Today we still have bottles of our second collaboration with Weathered Souls Brewing in San Antonio, Texas. We loaded this Pastry Stout with Vanuatu Vanilla Beans, Guatemalan, Ugandan, and Jamaican Cacao Nibs, as well as real New England Maple Syrup. Unlike other beverages or foods that use extracts or "natural flavors," you WILL NOT get that in-your-face maple aroma but rather a robust, lasting, and real maple experience. This is the thickest beer we have produced to date. ...We know this because we could barely push it through our lines without over carbonating the beer. NEW BEER Today we are previewing all the beers that are being sold in cans tomorrow. For Mulligan IPA, we set out to design the perfect IPA to drink on the golf course, as well as playing the board game in which this beer is named after. Mulligan IPA is a clear IPA and lighter than most of our hoppy offerings. The malt bill is as pale as we can make it and is blasted with a 5.5 lb per bbl combo of Citra, Simcoe, and Strata. COLLAB DAY Today we brewed with Andrew from @AroundTheHornBeer in Groveland, CA. This less than a year old brewery has been making absolutely fantastic beer since they opened. Together, we combined our Hazy DIPA recipes and decided to showcase a hop combo of New Zealand Southern Cross and our hand selected Citra hops. Cans and draft will be available in a few weeks. And if you’re ever on your way to Yosemite National Park, make sure to stop by their brewery and load up on as many crowlers as you can.

BOTTLE RELEASE 5/15 This Saturday at 11am we are releasing our third collaboration with @ModernTimesBeer from San Diego, CA. We asked them what was their favorite treatment they have done to their stouts and they responded with their NOLA treatment based off a Cafe Noir or New Orleans-Style Coffee. We roasted local almonds, toasted chicory root, Mexican vanilla beans, and Honduran coffee beans roasted by Modern Times. The result was less of a coffee forward beer but more of a... coffee drink balanced with the other nutty and sweet flavors. Strawberry Sweetheart is a new Valentine's Day themed Imperial Stout aged 21.5 months in Barton 1792 and Weller barrels then treated with strawberries, vanilla and cacao. This week we are teaming up with SLICE BEER CO and Urban Roots Brewing to bring you the second iteration of Meeting of the Minds. This three way Hazy DIPA collaboration will be brewed at all three locations and will have only one thing different...the yeast. All three recipes will contain the same grain, hops, and brewing techniques, but will use three different IPA yeasts to ferment them. Every version will be released at the same time in a few weeks from their respective breweries. Will you collect them all?

Imperial Stout aged in Tawny Port barrels for 21 months then treated with Tanzanian vanilla beans 12.0% Alc/Vol $30 per 500ml bottle Limit TWO bottles per person Almost two years ago, Phil Wymore, Owner and Brewer of Perennial Artisan Ales in St. Louis, Missouri visited our small brewery. Together we brewed a fresh beer for immediate release (Cafe de Olla) and designed a separate recipe for extended barrel aging. That barrel recipe brew was then aged in Tawny Port barrels for 21 months. To balance out the tannins and enhance the flavors of the port wine, we added a touch of Tanzanian vanilla beans, about a third of our normal vanilla dosing rate. With notes of French oak, cherry, strawberry, raspberry, and heavy blackberry, Night Cap is the perfect sipper to end your day with. BOTTLE RELEASE 1/30 This upcoming Saturday 1/30 at 11am at our taproom, we are releasing our next bottle offering called Virtual Hugs. For this beer, we teamed up with Corey from @3SonsBrewingCo and combined our Imperial Stout recipes to incorporate elements of how we both approach Non Barrel Aged Imperial Stouts with post fermentation treatments. For Virtual Hugs, we used 14 lb/bbl of cashews, 2 lbs/bbl of Guatemalan cacao nibs, and .4 lbs/bbl of Congo vanilla beans. COFFEE COLLAB RELEASE Attention all coffee enthusiasts! This Saturday at noon we are releasing 12 oz bags of our collaboration coffee roasted by Mostra Coffee, Roast Magazine's Roaster of the Year. A few months back we gave @MostraCoffee the barrels for our GABF award winning Barrel Aged Imperial Stout, Grasp of Oak. They aged green coffee beans in the barrels for a few months and, over time, periodically roasted samples to see when the barrel aged beans would be ready. Using... their expertise, they selected what they thought would be the best single origin for the apple brandy and vanilla bourbon barrels. Ultimately they went with washed processed beans from Honduras for their rich characteristics of nutella, sesame brittle, and whipped butter. After the barrel aging process, these characteristics evolved into two completely different products. Try both to see what each barrel has done to the beans. We will be releasing the majority in our taproom Saturday 12/12 at noon and a small amount will be offered on our web store Monday 12/14 at noon.
