At Midnite Bagel, one key difference is a higher hydration dough, according to founder Nick Beitcher, who was most recently a bread baker at Tartine and left to fully focus on his bagel pop-up during the pandemic. His bagels taste more like a nuanced, spongey loaf you’d find at Tartine, but with a round shape and thin crust. Beitcher sources flour from Washington’s Cairnspring Mills, incorporating rye into his basic dough for a nuttier flavor. He also experiments with other flours, like in a recent buckwheat-black sesame version...He wanted to create the artisan bread bakery version of a bagel. Beitcher, who has family in NYC and lived in the city to work at fine dining temple Per Se, said though he likes New York-style bagels, it’s no longer what he wants to eat these days. We love working with these inspirational leaders. It’s an honor roasting their delicious coffees and serving them to you. First photo in this series is the legendary Tesafaye Bekele founder of Ethiopia’s Suke Quto Farm. The second image is Silvia Barretto, visionary organic producer from Brazil FAF . The 3rd in this series is virtuoso farmer, Arturo Aguirre Sr. , patriarch of Guatemala’s world renowned Finca El Injerto. Last, but not least is Paulinho Almeida at his vanguard organic coffee farm, Santa Terezinha. Paulinho’s organic coffee was awarded 1st place in Brazil’s Cup of Excellence competition.
