January Detox anyone? . It’s that time of year when we all get the opportunity to start over, at least, that’s how it feels. It’s always a month I choose to reset my body. This year I am getting in deep and flushing each major organ used in the digestive process. To clean out your body, to flush and restore....it’s not just about the food you eat, it’s so much more! I’ll share some of those things over the month, for starts, I’m going to finish my green smoothie of lemon, parsley, collard greens, cilantro and water.

Nutella is not something I grew up eating, it’s not something I really care much for and I don’t like the ingredients...yes yes there are some worse things out there, however, skim milk powder and the amount of sugar in that jar are two things that I don’t want my kids to get used to. So, somehow they have learned of this stuff and have been asking me for it. I made the quick version before...you know... where you mix some honey and cocao powder in the nut butter and call i...t good. Would you believe me when I say, THEY DIDN’T LIKE IT! So, here goes nutritionist mama proving I can actually meet their expectations, so I go and make the real deal. Well, a healthier version still, but it’s almost the same thing, for reals. Now trust me, this took almost no time so don’t be afraid to try it! Ingredients: 1 cup hazelnuts 12 ounces enjoy life chocolate chips 2 tablespoons coconut oil 3 tablespoons honey 1 tablespoon unsweetened cocoa powder 1/2 teaspoon vanilla extract 3/4 teaspoon salt Instructions: Preheat the oven to 350F Spread the hazelnuts on a baking sheet and toast them in the oven for about 12 minutes, until they’ve browned a little and the skins are blistered a little. Wrap them in a kitchen towel and rub vigorously to remove as much loose skin as possible. (Some skin will cling to the nuts when you’re done. It’s okaynot to mention inevitable.) Let cool completely. Melt the chocolate in the microwave, 30sec at a time. Stir until smooth. Let cool completely. In a food processor, grind the hazelnuts until they form a paste. Add the oil, honey, cocoa powder, vanilla, and salt and continue processing until the mixture is as smooth as possible. Add the melted chocolate, blend well. The resulting homemade Nutella will be thin and somewhat runny and maybe even a little warm but it will thicken as it cools. You can strain it as you pour into your container if you want it perfectly smooth. Mine was 95% there and I was good with that. Scrape your homemade nutella into a jar and let it cool to room temperature. Cover the container, it will keep on the counter for up to 2 weeks. Kid approved, you are welcome. See more

I saw a salad at Whole Foods the other day that sounded super yummy but couldn’t get myself to spend $15 on something I could easily make. Here is my version of it. Ingredients: Kale... Roasted Butternut squash Sprouted Sunflower/Pumpkin seeds Shredded raw beets Crunchy chick peas Quinoa Tahini Salad addressing Measurements are just whatever you want it to be. I’d suggest seasoning each item as you cook/prep it. It may have been the best salad I’ve made yet!

I have been juicing twice a week. I keep it for a couple days, unless the kids really like it then it goes within 24hrs. Juicing has always been a part of our diet, not as regular as now, but at least a couple times a month. After a juice fast I recently finished, I realized how much my body needs support from juice that it wasn’t getting before. With MTHFR genetic mutations that are active, one of the benefits of juicing is that my body can more easily absorb and utilize the folate through juice than it can when eating whole foods. . So, we juice ALL the veggies we can get for a boost in the mornings. I juiced all that’s shown, plus beets, black radish and lots of cilantro. It’s what we had in the fridge and was amazing!

** Easy Drunken Zoodle Chicken Casserole** DESCRIPTION Paleo friendly Drunken Zoodle Chicken Casserole takes a spin on the original Pad kee Mao Asian stir fry and puts it in casserole form. Light, healthy! .... INGREDIENTS 1 1/2 lb boneless chicken thighs or breast INGREDIENTS FOR STIR FRY SAUCE: 2 tbsp fish sauce 2 tbsp chili garlic sauce/paste 2-3 tbsp gluten free Tamari soy sauce (or coconut aminos) mixed with 1 tbsp coconut palm sugar. Pinch of ground ginger 1 tsp lime zest and a splash of juice salt and pepper to taste . OTHER INGREDIENTS FOR THE CASSEROLE: 1 cup chopped onion 1 tbsp olive oil or sesame oil 1 tsp garlic 3 cups stir fry veggies (i.e. broccoli, snap peas, carrots .) 2 tbsp tapioca starch 1 red bell pepper, sliced 16 oz (or about 3-4 c Zucchini noodles- zoodles) This equals about 2 large zucchini 3 eggs 2-3 tbsp coconut milk GARNISH/TOPPING: Sesame seeds Basil . I rarely ask the kids what they want me to pack for lunch (often because they pack not me)...or this happens...1/2 lb salmon, two rolls and $$$ later. They will still come home saying they’d like more salmon. Someone catch me some fish to fill these boys tummies! . It’s a rough life they said, being gluten free, real food eaters and all.
