Jane was strong. She swore only when needed. She worked hard, she did things right and she always wore lipstick. The unofficial matriarch of our family. Jane was the woman we all aspire to become. Ever since, we’ve given each girl in our family the same middle name: Her name. Jane. It’s a constant reminder to be brave. To do things right. To be more like Jane. Today, we craft delicious wine under a similar name: Middle Jane. We do this because everything our wine represents just so happens to be everything she represented: Honesty. Passion. And a commitment to doing things with integrity. That’s how Jane would have done it. This Carignan hails from a family-owned and farmed vineyard in Mendocino County, California that was originally planted in 1912 using draft horses. In 2012, the family converted to organic viticulture and the vines have been exclusively dry-farmed ever since. For this wine, the grapes were hand-harvested from the 106-year-old vines, destemmed and underwent native yeast fermentation in stainless steel tanks for 18 days. Then the wine aged for 31 months in neutral French oak barrels before being bottled, unfined and unfiltered. Did You Know? A draft horse is a large horse bred to be a working animal doing hard tasks like plowing, transporting grapes to the winery, and other farm labor and take the place of modern machines. They are recognizable by their tall stature and muscular build.

To this day, the winery is family-owned and operated, with over 170 acres of organic, dry-farmed vineyard. Jacques and his son, Jacques Jr. are 11th and 12th generation winemakers, respectively! The soil in AOC Crémant d’Alsace a winemaking sub-region in Alsace, France - is rich in clay and limestone. The clay helps the soil to stay cool and retain water. Since irrigation is prohibited in winemaking in this region, the water-retaining clay soil is essential to grape growing. In addition, limestone contains important nutrients that help the grapes grow better and sweeter, naturally. For this wine, grapes were hand-picked from 15-year-old vines, then placed in a pneumatic press. The juice fermented on native yeast for almost 2 months in a temperature-controlled, stainless steel tank. Then it aged on the lees for nearly 2 months, prior to bottling for secondary fermentation. This sparkling wine is made using the traditional method it spends nine months in the bottle during the secondary fermentation process! Did You Know? Crémant is a French term for sparkling wines made using the traditional method. In this process, yeast is added to the bottle after the initial fermentation for a secondary fermentation to take place. This process is what creates the bubbles in the wine! www.lindascellar.com

It’s a beautiful estate and the winery building itself was created with the ancient and sacred geometry principle The Golden Ratio in mind. This mathematical ratio is commonly found in nature and when used in design it fosters organic and natural looking compositions that are pleasing to the eye. The result of its use at the winery? Structures that create positive energy flow for both winemaking and wine-aging. Also, the winery is insulated with natural materials such as straw, and the winery team recycles residual water. The Demeter Certified Biodynamic vineyard is about 2400 feet above sea level and is primarily sandy loam. The grapes were hand-picked from 14-year-old vines before being pressed. The wine was fermented with native yeasts in cool temperatures for about 7 days. 70% of the wine aged in French Oak barrels, while the other 30% aged in stainless steel, for 12 months before spending 7 months in the bottle before being released. Did You Know?: There are only four certified Demeter Biodynamic wineries in all of Argentina and this winery is one of them. Argentina is just beginning a culture shift away from chemicals and back into the old-fashioned way of farming naturally like mother nature intended.
