Sadly, since I elected to not sulfide my recent pressing, the wild yeast and bacteria overpowered the yeast I added. The cider is funky and undrinkable. On to the next batch.

Hi all. I know it's been a while. But I've been busy. I the last year and a half I have been perfecting my craft and doing some experimentation. Take a look at the photos and see what I'm up to. I built a cider press and put apples, pears, and pomegranates through it. The last few photos show something I am rather happy with how they turned out. Introducing Laughing Crow's Blackbird and Bluebird ciders. Made with Blackberries and Blueberries respectively.

For the past couple of weeks I have been working with a SCOBY called a Ginger Beer Plant. It makes a slightly alcoholic beverage (2-5%abv) that is a pleasure to drink and also mixes well with a nice dry cider. I have been rather gentle with it as it has been recovering from storage and growing. Tonight I decided to experiment. Instead of lemon juice, I used blood orange juice. The color is amazing. I can't wait to try the final product.
