BONE BROTH Bone Broth has been traditionally used in cultures around the world for hundreds of years. Artichokes, Prickly Delicious Artichokes look interesting, though How does this thistle (edible flower) help my body? By Lisa Miller, Nutrition Consultant... Artichokes are helpful for digestion, nutrient absorption, toxin elimination, lowering cholesterol, managing blood sugar, are cancer-fighting, and much more! Most, people favor, or focus on, the heart of the artichoke, but the leaves have been found to have the highest antioxidant properties! Artichokes stimulate the liver to release bile, which helps carry away toxins. It increases the flow of bile from the liver because the liver uses bile as a transport medium for toxins that it has broken down and need to be removed from the body. Bile is also involved in the digestion and absorption of fat, therefore an increase in bile will aid in digestion when alongside a fatty meal. The cholesterol-lowering effect may also be due to the artichoke’s ability to speed up the movement of fatty material (which is the material used to make cholesterol) out of the liver. Artichoke is also believed to be an ideal diabetic food. It is high in a special kind of sugar known as inulin. Inulin is believed to play a beneficial role in blood sugar management, helping other sugars consumed alongside it to be released into the bloodstream at a far slower pace. For all these reasons and more, I recommend adding this amazing vegetable to your diet. It is low in fat, rich in fiber, vitamins, minerals, antioxidants, and delicious too! Love your peas! Peas are delicious and a staple for all ages in many cultures. Wild peas are native to the Mediterranean and The Near East. It is one of the oldest domesticated crops with some sources claiming they have been consumed at least 5-7 thousand years! Peas belong to the legume family, together with lentils, beans, and peanuts, which are plants that produce pods with seeds inside. There’s a great variety of peas, not just green ones and they do differ in taste and ...nutrition content. This includes yellow peas, black-eyed peas, purple peas, and of course green peas. Peas are rich in protein, carbohydrates, fiber, and low in fat. They are an excellent source of vitamin A, C, folate, thiamine (B1), iron, and phosphorus. When consuming plant-based protein sources, we want to maximize the amount of available essential amino acids (the building blocks for proteins). Pea proteins provide a very good assortment of these amino acids, though partner peas with seeds or nuts and it will give you even more complete coverage of the essential amino acids to create the proteins your body needs! A little dairy is also a great way to complement pea protein, as we have done in the recipe today. Interestingly enough, the protein, fiber, and carbs are similar to black beans, another delicious staple to add to our routine. Peas are available year-round, when they are not in season, you can find them in the frozen food aisle. While most of the time fresh is best, the majority of freshly frozen garden peas are frozen within a staggering two and a half hours of being picked, locking in all the nutrients! Thus, also making them an excellent and filling snack, side dish, or main course! Our recipe today is made with fresh or frozen peas, this is a spring version of split pea soup which is made from green peas that have been dried and then cut.
