We’re still keeping our trips to the store few and far between, so we focus on getting shelf-stable foods in bulk, then lean on our garden to fill in the gaps. A favorite around here Elderberry Pineapple Smoothie! 1 cup pineapple 1 frozen banana 5 ice cubes... 1 cup almond or coconut milk 1/2 cup water 1 tablespoon Carmel Berry Company elderberry syrup Blend all together except the elderberry syrup. Hey friends! Some of you have written over the past few months asking when we’ll resume juice production, so I wanted to take a moment to check in. It was my hope when we began sheltering in place back in March that our country would be able to get Covid under control, and I remain hopeful. But until that happens, we’re playing it extremely safe and sticking to work that can be done entirely from home. Like everyone else, I wish more than anything that we could know when this will be over. Until then, we’re making the most of our time here together learning, playing and growing where we’re planted.

I love this recipe because you don’t have to wait for the chia pudding to set for hours in the fridge just blend 1/2 cup chia seeds into 2 cups your choice of milk (we used cashew), let it set in the blender for five minutes, blend again and pour into bowls. Top with fresh berries and Carmel Berry Company syrup. We paired Elderflower Syrup with strawberries and Elderberry Syrup with blueberries. Big hit with the kiddos!

And I’m loving this peanut dipping sauce from Minimalist Baker: 1/2 cup salted creamy peanut butter* (or almond butter or sunflower butter)... 2-3 Tbsp gluten-free tamari (if not gluten-free sub soy sauce // if soy-free sub coconut aminos*) 1-2 Tbsp maple syrup (or other sweetener of choice) 1 tsp chili garlic sauce (or 1 red Thai chili, minced // or 1/4 tsp red pepper flake // adjust to preferred spice level) 2-3 Tbsp lime juice ~1/4 cup water (to thin) See more

Loving this butter lettuce and berry salad the dressing is what really makes it! Here’s the recipe: 6 tablespoons olive oil... 3 tablespoons apple cider vinegar 2 tablespoons lemon juice 2 tablespoons Carmel Berry Company elderberry syrup 1 tablespoon honey or agave syrup Top your lettuce with berries and cashews, and save your extra dressing in a little jar in the fridge for later.
