Summer is HERE! Low carb grilling (even your vegetables) can be so easy and delicious. Try this colorful and nutrient- packed side dish this weekend! Yum! Grilled Asparagus Salad w/ Feta & Tomato INGREDIENTS: ... 1 bunch asparagus, ends trimmed 2 tablespoons olive oil 1/4 teaspoon sea salt 1/4 teaspoon ground pepper 1/2 cup feta cubes or crumbles 1 cup sliced grape tomatoes DIRECTIONS: Toss the asparagus spears with the olive oil, salt, and pepper in a baking dish. Place asparagus on the grill perpendicular to the grates and grill over medium-high heat for 3-4 minutes, until browned but still crisp. Remove asparagus from the grill. Leave whole or cut into bite-sized pieces and return to the original baking dish, add tomatoes and toss with any remaining olive oil mixture. Add feta and season with additional salt and pepper to taste. Serve at room temperature. ENJOY!

If you are missing your local brunch spot, stay at home and make this delicious low carb recipe. Enjoy! HAM AND CHEESE CHAFFLE INGREDIENTS ... 1 large egg 1/3 cup shredded cheese of your choice 1/4 cup chopped deli ham 1/4 teaspoon garlic salt 1 tablespoon mayonnaise 2 teaspoons dijon mustard INSTRUCTIONS Plug in your waffle iron to preheat. Whisk the egg in a small bowl. Stir in the cheese, ham, and garlic salt to combine. Spoon half of the mixture into the hot waffle iron, close, and cook for 3-4 minutes or until your waffle iron stops steaming and the waffle is cooked through. Remove the waffle to a plate and repeat with the remaining batter. Stir together the mayo and mustard to use as a dip. Slice the waffles in halves or quarters and serve with the dip.
