It's time for a Meatless Monday post! I'm a day late, but my meatless day doesn't always fall on a Monday anyway. Sometimes it falls on multiple days! This "Cozy Autumn Wild Rice Soup" by @gimmesomeoven is so tasty and satisfying, with vegetable stock, wild rice, baby bella mushrooms, garlic, carrots, celery, sweet potato, onion, bay leaf, Old Bay Seasoning, coconut milk, and kale.
