HAPPY NATIONAL SHORTBREAD COOKIE DAY Ingredients 1 cup (2 sticks) unsalted butter, softened (226g)... 3/4 cups granulated sugar (150g) 1 teaspoon vanilla extract optional 1/2 teaspoon salt 2 1/4 cups all-purpose flour (280g) 1 cup dark chocolate melting wafers or semisweet chocolate chips for drizzling/dipping optional (170g) Instructions In a large bowl with an electric mixer (or using a stand mixer) beat butter until creamy. Add sugar, vanilla extract, and salt, and beat until completely combined. Gradually add flour until completely combined into butter mixture. Be sure to scrape the sides and bottom of the bowl as needed so all flour is incorporated. Stir until combined, but try not to over-work the batter. Use a spoon or spatula to work dough together into a ball and then transfer to a piece of plastic wrap or wax paper. Work into a disk then transfer to refrigerator to chill for at least 15-30 minutes. Once dough has nearly finished chilling, preheat oven to 350F (175C) and line a baking sheet with parchment paper. Set aside. Once dough has finished chilling, transfer to a lightly floured surface and use a rolling pin to roll out to just over 1/4" thickness. Use round, 2 1/2" cookie cutter to cut into shapes. Use a spatula to transfer to prepared baking sheet. Space cookies at least 1" apart. Bake in 350F (175C) oven for 15 minutes or until edges are just beginning to turn a light golden brown. Allow to cool completely on baking sheet before enjoying or dipping in chocolate. If you'd like to dip/drizzle in chocolate, prepare melting wafers according to instructions on packet, Dip cooled cookies in chocolate or drizzle chocolate over cookies. Allow chocolate to harden completely before enjoying. EGGNOG FRENCH TOAST BAKE If you’ve never made French toast bake before, it’s super easy. You don’t have to stand over the stove flipping each piece individually, so it saves a whole lot of busy work. Ingredients... French Toast Bake 1 large loaf (15oz-18oz)) 5 large eggs 1 3/4 cups eggnog 1/2 teaspoon nutmeg 1 teaspoon vanilla extract Crumb Topping 1/2 cup all-purpose flour 1/2 cup brown sugar 2 tablespoons white sugar 1/2 teaspoon nutmeg 1/2 teaspoon ground cinnamon 1/3 cup butter, melted Instructions French Toast Grease a 9x13 inch/ 3-quart casserole dish. If baking immediately, preheat the oven to 350F degrees. Cut the bread into bite-sized squares and place in the casserole dish. In a large bowl whisk together the eggs, eggnog, nutmeg & vanilla extract. More the egg mixture over the bread Crumb Topping Whisk together the flour, brown sugar, white sugar, nutmeg & cinnamon. Stir in the melted butter. It should be like wet sand in consistency and form crumbles when you squeeze it in your palm. Crumble the topping overtop of the French toast. GINGERBREAD LATTE There’s nothing like a heartwarming mug of goodness, especially during the holidays and when it’s a homemade latte that’s gingerbread flavored. Oh yes, gingerbread my friends, that’s epic! INGREDIENTS... LATTE 1 Tbsp blackstrap molasses 1 Tbsp maple syrup 1 tsp vanilla bean extract 1 tsp ground ginger 1 tsp ground cinnamon 1/4 tsp ground nutmeg 1 1/2 cups almond milk or milk of choice 3/4 cup strongly brewed coffee TOPPINGS 1/4 cup whipped cream 2 tsp ground cinnamon, to dust Gingerbread men INSTRUCTIONS In a small mixing bowl, combine molasses, maple syrup, vanilla, ginger, cinnamon and nutmeg. Mix until well combined. In a medium sized saucepan over a medium heat, add milk and then whisk through molasses mixture. Whilst milk is heating, prepare the 3/4 cup of coffee and set aside. Once steam begins to come off the surface of the milk, reduce heat to low and stir through coffee. Heat through until desired drinking temperature. Remove from heat. Pour into coffee mugs and top each with whipped cream, a dusting of cinnamon and a gingerbread man. Serve and Enjoy! INGREDIENTS... 4 tablespoons butter unsalted 1/4 cup flour 1/2 teaspoon kosher salt 1/2 teaspoon crushed black pepper 1 cup McCormick Simply Better Turkey Gravy 1 cup whole milk 1 cup mozzarella shredded 3 cups cornbread cut into 1" chunks 3 cups chopped turkey meat cooked 1/2 cup frozen peas 1 cup chopped carrots 1 cup chopped frozen green beans INSTRUCTIONS Note: click on times in the instructions to start a kitchen timer while cooking. Preheat the oven to 350 degrees and add the butter to a medium sized saucepan melting it on medium heat.
