Feeling like chicken soup? Me too! Here’s a family recipe that is a staple in my house. I’m so excited because carrots that my daughter and I planted in the beginning of the Quarantine are ready to eat!! Chop up yellow onion, carrots and celery, put to the side. I like to keep the onions separate. Grab a crock pot and Brown chicken thighs seasoned with salt and pepper in olive oil, remove and let sit on a plate to catch those yummy juices. Brown onions in same pan, add carrot... celery mixture and cook until starting to get tender. Add herbs if desired(I like 3 bay leaves, thyme and a bit of parsley) stir to incorporate then deglaze with some white wine(optional but its a must for me!) then add about 4 cups chicken stalk, stir and then fill remainder of pot with water. Add in the chicken thighs and any juices. Allow to simmer then cook for 4-6 hours either stovetop or in the crock pot and voila! Chicken soup for one night and then you can make matzo ball soup with the leftover stock...my kids LOVE that!! Happy cooking! See more
