New Coffee!!! We are so elated that we got our hands on the very last of this unique coffee and we are excited to be able to share it with you. This vibrant coffee comes from 14 producers with small farms in the municipality of Palestina in the district of Huila, Colombia. When Nabeel, who is Palestinian, first discovered this coffee, what caught his attention was its name of origin - Palestina. The town’s name sake is most likely linked to the significant numbers of Palesti...nians who migrated to Central and South America in the early 1900s. The coffee’s name also reminds us of coffee’s roots in East Africa and the Arabian Peninsula, only to now be grown all throughout the Global South. However, you can’t make coffee purchasing decisions off of a name alone, no matter how beautiful the name. When we sample roasted the coffee and brewed it up for a test drive, the coffee was exquisite. The first sip was floral, sour, and sweet all at once - like biting into a Pink Lady apple. Then the flavor rounded out with notes of baking spice with a chocolate undertone. The uniqueness of this coffee can be attributed to it’s varietal, an uncommon mutation called Pink Bourbon.

Selling collectively since just 2018, the 26-member cooperative has already proven the quality of their products while also dedicating themselves to preserving the local environment. More importantly, the coop maintains a supply to show off at their local roastery and cafe in San Lucas Tolimán. This vibrant coffee opens with a woody sweetness of dried fig and chocolate nougat as a raspberry acidity shines through. The bracing opening mellows as the coffee coats the palate leaving a full, warm, and inviting mouthfeel that intrigues even as the coffee cools down.
