We are crossing our fingers (and our toes) hoping that we get a solid rainy season this year. In this part of California, we usually get rain from the end of October through the end of April. Normal rainfall gives good shoot (canopy) growth to our vineyards and our vines flourish under these conditions. Get that apron on, because we have a recipe and wine pairing you're going to love! Pesto Stuffed Chicken Breasts paired w/Gainey Limited Selection Pinot Noir 2-4 chicken breasts, flattened ... 1/2 cup mozzarella cheese, grated 1/2 cup Gainey Pantry Basil/Garlic/Pine Nut Pesto 1 cup panko bread crumbs 2-3 TBSP parmesan, grated 1 TBSP Gainey Pantry Rosemary Garlic Seasoning Olive Oil, drizzled on top DIRECTIONS: Preheat oven to 425-degrees. In a small bowl, combine bread crumbs, parmesan, and rosemary garlic seasoning and set aside. Place chicken breast in a freezer bag and pound until flattened with a rolling pin. Slice horizontally (butterfly) making sure not to slice all the way through. Open chicken breasts and spread a tablespoon of pesto on one half. Sprinkle with mozzarella cheese. Press filling down into meat. Beginning on one side, very carefully roll chicken breast. Drizzle olive oil over top and coat the top and sides with bread crumb mixture. Place seam-side down on baking pan (if possible, use a silicone baking liner the pan). Open your bottle of Gainey Pinot Noir and enjoy with your dinner! If you’re not sure what this meansit’s a wine production design style that takes place on two different floors Grapes come in from harvest on the top floor and then travel downward, pulled by gravity, as the wine moves from crush, to fermentation, to aging and bottling Gravity flow provides a gentler, less interventionist approach to winemakingas opposed to moving the wine around with pumps... and hoses.
