Here’s a taste of what we’re doing in Fatdaptation Online Workshop. Our 30 participants are wrapping up week 2 and on their way to optimal metabolism and improved energy/ health /body composition! Lots of learning, simple daily behavior changes and lots of encouragement. WEEK 1 Lesson 2 The Skinny on Hydrogenated Fats & PUFAs... Hydrogenation is a process where poly or monounsaturated oils typically derived from grains, nuts and seeds are subjected to pressure and or heat to turn unsaturated bonds in saturated bonds (essentially adding hydrogen atoms at points along the fatty acid chain) and convert the oil into a solid or colloidal fat (think margarine). Now that was a mouthful, wasn’t it! Why is this and what’s the problem? Hydrogenation is done to increase the shelf life of oils that otherwise would turn rancid very quickly, as polyunsaturated oils/ PUFAs are unstable. (More on this later, but this is one of the reasons PUFAs are not healthy in the quantities most Americans take them.) Food manufacturers figured out they could saturate cheap corn and soybean oil and then use them in everything from breakfast cereal to crackers to peanut butter to frozen desserts. Oh, and margarine....

Sometimes a little sweet treat hits the spot. Making it from scratch (with grain free flour, lots of eggs and butter, and dark cocoa) is ultimately more satisfying and provides an opportunity to relax and create.

Applying information, strategies, and individual values clarification may take a little more effort than following established Good Food /Bad Food lists, but ultimately it is more sustainable, effective and feels better.
