Thank you Manny Chavez for sending in a picture of your rendition of Executive Chef Patrick's recipe for Cabernet-Braised Short Ribs! It looks delicious! When we were in lockdown at the beginning of 2020, Chef created videos to document his favorite lock-down recipes. Check out his recipe for Cabernet-Braised Short Ribs and send us a pic of your delectable plates! Ingredients:... 1pk Bone in Short ribs (about 2lbs) tt Salt & Pepper 1tsp Vegetable Oil 1ea Yellow Onion, peeled, chopped 1ea Carrot, peeled, chopped 3ea Celery Stalks, chopped 12ea Garlic Cloves 4Tbsp Tomato Paste 2Tbsp Flour, or Gluten Free Flour 2C Cabernet Sauvignon 1.5C Beef Broth 1tsp Dried Thyme 3ea Rosemary Sprigs Method: Preheat the oven to 350 degrees Season the beef liberally with salt and pepper. In a very hot sauté pan, sear the beef on all sides and transfer to a roasting dish Reduce the heat to medium, add the onion, carrot, celery and garlic. Cook, stirring occasionally, until the vegetable are well caramelized. Add the tomato paste and cook for 1 minute. Add the Flour and cook for 30 seconds. Deglaze the pan with the red wine, stirring constantly. Add the beef broth and return the braising liquid to a boil. Add the thyme and rosemary. Add the braising liquid and vegetables to the roasting pan with the beef. Cover tightly and bake for 3 hours, or until "fork tender well done." We hosted a SOLD OUT Pop-Up "Taste of Fall" Dinner last night at The Sunset Grill. Executive Chef Patrick Tafoya whipped up some Cabernet Braised Short Ribs over buttermilk mashed potatoes. While waiting on her order, Ms. Mandy Jackson snapped this photo while sitting outside on the patio. We hope everyone enjoyed last night's meal and we look forward to next week's dinner featuring BBQ brisket. Yummy!

DID YOU KNOW? Kikuyu grass, native to eastern Africa, is very aggressive and drought tolerant. Many courses in Southern California use this grass (most notably Torrey Pines and Riviera Country Club), however as it is non-native, we prefer to remove it.

It's been 2 weeks since aerification and the greens are healing nicely. The greens have rebounded and are close to being back to prime playing conditions. Their health and color are remarkable. They will be a bit bumpy for another week or so, but we are continuing to lower the heights of cut down and rolling. #ExperienceTroon

It has been a wonderful season with this awesome bunch. There is no other feeling quite like helping young athletes further develop their love and passion for the game of #golf. Tip of the cap to Khiana and for all her hard work on this project!

Andy and his team aerified the golf course this week. The process will allow oxygen and other nutrients to access the roots. Imagine how well the tees, fairways and greens are now breathing! Can you guess how many cores we pulled from the greens alone? The number might surprise you! #agronomy

Congratulations to Miguel Bunting, 2020 Men's Stroke Play Champion! His aggregate score of 153 was enough to edge out Brett Wilmes and the rest of the field. John Schwonke and Jay Bansal were the Champions of the Green Tee Flight and Green/White Combo Flight, net divisions, respectively. ... Thank you to everyone who participated and everyone who worked hard to make this happen!
