John, a faithful supporter of our mission also makes a custom toy box for one of our children each year. Thanks so much, John! Our new Center provides much needed resources like therapy, case management, classes, referrals and more to pregnant women and mothers who don't need shelter. Today, Elizabeth House celebrates Juneteenth, the oldest commemoration of the end of slavery in the United States. One hundred and fifty-five years ago on June 19, 1865, two and a half years years after Abraham Lincoln issued the Emancipation Proclamation, slaves in Texas were finally ordered free by General Gordon Granger. The Heart of Elizabeth House for the Families We Serve Over the past months, in response to the COVID-19 outbreak, Elizabeth House has made every effort to lovingly support our residents and alumni in furtherance of our mission. We now face another national crisis brought again to the fore by the death of George Floyd while in police custody, and widespread demonstrations that have ensued.... The board and staff of Elizabeth House are heartbroken and grieve with the Floyd family. As a faith-based nonprofit, we stand in solidarity with efforts towards race reconciliation in our communities and remain committed to values of justice and equality. Elizabeth House affirms the rights of all our mothers and children, most of whom are from minority populations. Since our founding, our heart has been to heal and empower pregnant and parenting women and their children experiencing homelessness. Through our Residential Program, Alumni Services and our new Center for Mother and Child Wellbeing, we continue to provide wrap-around, life-long care to our families so they can build successful legacies against all odds. Here we go! Albondigas (Meatball) Soup recipe from alumna, Stephanie! Ingredients 8 cups water 1 tablespoon dried oregano... 1/3 cup rice 1 tablespoon chicken bouillon 8-10oz ground beef 1 tomato diced 1/2 onion diced 1 egg 1/2 teaspoon salt 2 cups veggie of choice (I like carrot, broccoli, celery) cut to small size. Directions 1. Put water, oregano, rice and chicken bouillon in pot. Bring to boil, lower down to simmer... stir. 2. In a bowl, mix ground beef, tomato, onion, egg and salt. Make 12 meatballs and add them to the pot. 3. Cook for 20 minutes on a low setting. 4. Add vegetables, and cook another 10 to 15 minutes until vegetables are soft. Enjoy!!
