Cuban food is a blend of Spanish, African and Caribbean ingredients and cooking styles. Traditional Cuban dishes involve a lot of rice. The Arroz con Pollo is the Cuban version of paella and Chef Hector offers this one in the Chorrera style - with beer & wine mixed with the cooking broth. Another classic dish is the Ropa Vieja - actually, the national dish of Cuba! It means 'old clothes' (!!) and is a beef stew. This week Chef Hector brings to you a chicken dish for the ages. The Pollo en Pepitoria has been a popular part of Spanish gastronomy for quite a few centuries now. A very similar preparation has been found in recipe books from the 13th century! Some of its ingredients, like saffron, suggest that it was introduced to the Iberian peninsula by the Moors.
