Our almond croissants have always been the most favorite item in the bakery. We used to make our almond cream with added organic party cream, made with whole vanilla beans. Someone convinced me that a simpler version of almond cream, that was easier to make (never anything artificial, though) was just as good and made life a little easier in the bakery. Well, you know what, it was definitely a little easier, but the over-the-top richness and delicacy of flavor of the original recipe was lost. It took me a couple of months, but I've gone back to the original version. Is it ever delicious!
