Chef rides high with ‘franch’ cuisine Even in pandemic, foodies stampede Los Alamos bistro Forgive Daisy and Greg Ryan for feeling whipsawed by 2020. Word of Daisy’s French bistro cooking was spreading when the pandemic shut down Bell’s, the restaurant they opened in Los Alamos two years ago.... Like others, the husband-and-wife duo switched to takeout and scraped by. Then, in May, Daisy was named one of Food & Wine magazine’s Best New Chefs for 2020. When Bell’s reopened for patio service they had a stampede of customers from Los Angeles and San Francisco. By fall they were busier than ever. The couple is grateful but acutely aware their success in this topsy-turvy year is rare. COVID-19 closures devastated many of their friends in the food and wine industry. So while chef Daisy, 34, slices a fine steak tartare, Greg, 38, the front-of-house guy, sends out messages urging passage of the Restaurants Act, a relief package for the hospitality industry that has stalled in Congress.
