Happy Tuesday! So today I realized that this time two years ago, I was in Thailand! One of the cool things I brought back was this newfound knowledge of butterfly pea flower tea. Anyone remember the lavender heights? A classic French 75 with a splash of this distinct, deep, blue tea is sure to turn a few heads. The fact is, the liquid changes color based on the pH level of the substance added to it. Lemon juice = Purple drinks! In Thailand and Vietnam the butterfly blue pea ...flower tea is commonly mixed with honey and lemon for a drink usually served after dinner, or as a refreshment at hotels and spas. This drink has been described as being a typical local drink like chamomile tea is in other parts of the world. Today is Valentine’s Day, and I would like to take this time to appreciate this last year of bartending, creating, and developing as a cocktail bartender for this little angel face! This picture was taken almost a year ago, on her very first shift off of training. Miranda Brown has been in the industry for a long time, she’s always expressed interest in bartending, but was too afraid and didn’t know how to dive into the other side of the bar. As the bar manager at that time, ...I saw all of those things in her; the constant questions about what I’m making, why I did something a certain way, the flavors, how it’s made, everything! I saw the passion, the drive, bartender personality, and desire in her heart. So I took the chance and promoted/trained her from a server to a bartender, and she hasn’t looked back since! Since then, she’s been entering cocktail contests, doing recipe research, R&D with me on local cocktail hotspots, she is a ROCKSTAR and people are taking notice! I’m so honored to have you by my side, constantly supporting me, inspiring me to be better everyday, as my business/life partner, I love you so much and I am SO proud of what you’ve done in the last year! Reduce, reuse, dehydrate! Working on being mindful and repurposing anything that would go to waste in house. These are all spent lemons (no peels left on the outside because we use them for adding citrus oils and also garnishing the cocktails) that we collect, cut and the dehydrate for another garnish opportunity instead of just throwing them away because as wedges, slices, or wheels they would look too unappealing for our guests. Just one quick/easy run through the dehydr...ator unless they are still sticky or moisturized at all, then keep them in a bit longer, and you got yourself a beautiful garnish now!
