Birria is a way to cook goat meat, it seems to stem from the state of Jalisco. Traditionally it is cooked as a stew. The cuts of lamb or goat are normally the tougher bits. The beauty is there is more flavor that way. Traditionally it is served for holidays or special events (Weddings, Christmas etc).... 30 years ago when the restaurant first opened this was a dish that we couldn't leave off the menu. It's soft aroma, paired with its soft texture when cooked made it an instant Dos Arbolitos favorite. A great Tamale comes from the blend of the masa, and sauce you cook the meat in. mirrored with the sauce you pour when serving. The tamale is a complex dish.
