From Luigi: I was born on an island that, during the summer, comes alive with tourism; an island of mixed heritage; a piece of Liguria amidst the crystal-clear waters of Sardinia... San Pietro is renowned amongst those with refined tastes as the last remaining traditional port that fishes bluefin tuna. I represent the third generation of chefs in my family. This tradition began with my grandfather Luigi, a farmer with a strong passion for cuisine, who decided to take on the role of manager in the Hotel Riviera’s restaurant, in Carloforte. Mine is a passion that can be found on my DNA, and was most certainly influenced by the sights and smells that I remember from a very young age, to the merit of my father Nicolo, who taught me the skills and discipline of this trade. After graduating from the Alghero school of hospitality and catering, in addition to working for the family restaurant of DA NICOLO in Carloforte (the only town on the small island of San Pietro), I decided to improve my skills and meet new colleagues in a multicultural environment, undertaking positions all over Italy and abroad. With each step, I have enriched my culinary and cultural knowledge, which have lead me to positions in many important restaurants, including Sirio Maccioni’s Le Cirque in New York, and the prodigal, three-Michelin-starred Marco Pierre White’s London restaurant Oak Room. My wish to familiarise myself with other cultures lead me to new horizons: I decided to take part in some competitions in 2003, representing Italy in the BOCUSE D’OR and winning the world COUS COUS FEST. To keep myself occupied in the meantime, I took an interest in television: as of 2000, I took part in various programmes, such as La Prova del Cuoco (6th edition) and La Cucina del Gamero Rosso, to name but two. I have taken part in the creation of a number of books Tonno e Pesci del Mediterraneo, by Luigi Pomata, Etoile Edizioni Istituto Superiore Arti Culinarie Etoile La cucina di Luigi Pomata Collana: a modo mio - I libelluli Edizioni Il Golfo TUNA casa editrice ITALIAN GOURMET, SAPORI A COLORI casa editrice ARKADIA and I still undertake an active role in cookery seminars and courses All things considered, I have seen my fair share of the world; however, having grown up on an island, or rather an island belonging to an island, I am used to seeing the mountains on one side and the sea on the other, and as such I feel the need to return to my home. In doing so, in addition to helping out with my family’s seasonal eateries, I decided to start a restaurant in Cagliari that would remain open all year round, with a new take on cuisine: the LUIGI POMATA. With this began a new venture, which has grown over the years, with the recent addition of the POMATA BISTROT, and which will soon offer something new, without forgetting our catering service, which takes us all over Italy and all around the world. In my free time, I have decided to share my art with those who hold a passion for it, and as such have created the SCUOLA DI CUCINA for lovers of fine cuisine and those with an interest in cookery. I am known as the Bluefin Tuna Chef, which is true in part, as this is the tradition of my homeland. Yet I will always remain a curious chef, who loves to experiment, make the most of my primary ingredients and, as is my family tradition, I wish to attain excellence. As such, if you live on an island as rich as ours, you are almost obligated to make sole use of local produce: however, if you require high quality cod, it must come from the north of Europe. If you wish to try the best oysters, they will undoubtedly have arrived from the cold waters of Brittany; likewise, the best lard comes from Colonnata. My rule is to support the best local produce, which is exactly why my tulips come from Holland, and I most certainly do not use greenhouse tomatoes. When asked about my profession, I like to respond: Love is like good cuisine: the best things are made with the simplest of ingredients; it is fantasy that renders them magical. See more
