Chewing mechanically breaks down our food, and releases enzymes in the mouth that begin the digestive process.Those include amylase, which helps break down carbohydrates and starches. An added bonus is that more we chew, the more slowly we eat. So we feel full without overeating. A good rule of thumb is to chew each bite 10-15 times before swallowing it.
