I am always trying to serve rare, unique staff. I ask Japanese local markets to send them. 1st is Shira-Ebi(Baby White Shrimp). It’s very seasonal and this specie is living in only Toyama. 2nd is Bafun Uni, Japanese Sea Urchin from Nemuro, east end of Hokkaido. 3rd is Scallops from Funka Wan(Volcano Bay) in Mid-South Hokkaido. 4th is fully grown Ohba(Sardine). 120+ is rare and fat, this is 150+ from Iwate.... 5th is Sumi Ika(Japanese Golden Squid). A regular customer requested cod milt today. But it was too late to order. I offered her tomorrow, but she says it’ll be busy Friday. I was lucky because cod milt is landed on Nemuro fish market, but flight had canceled due to bad weather. Sorry for using a lot of but today. I got good bluefin instead. Wild fish are depend on ocean conditions also sky conditions.
